Rich and creamy potato salad was something we ate almost every Sunday in Belize with rice and beans, stew chicken and fry plantain. Perfectly delicious in every way.

👩🏻‍🍳 BELIZEAN POTATO SALAD
1 lb. russet potato
3 eggs
½ tbs salt (add to pot with potato and eggs to boil)
1 can 8.5 oz peas & carrots, drained
2 tbs onion, finely chopped
1/3 cup Heinz Original salad cream
1/3 cup evaporated milk
½ tsp ground black pepper
¼ tsp salt

You are such a beautiful soul! Shirani, I totally understand how life is so hard after our Moms are gone. What you are doing here on KZfaq is fabulous, and a great testament to your Mother’s inspiration. I couldn’t help myself, I watched 4 of your videos back to back and loved what I learned in each one. You not only have solid recipes, you promote and describe new product as well as critical cooking and baking tips! I shared half the batch with my sister and her family and they were a huge hit! Even my fussy father enjoyed them and ate his fill! Thanks again for your videos and I trust life is getting more comfortable as time marches on. I remember my mom everyday and as time goes by the memories are sweeter and more poignant. In 2014 I had my last taste of potato salad my mom passed away with cancer I made a wowed not to eat it again . I do missed her I was one of daughter that never learned to cook, but then you enter my life with your Belizean cuisine and baking goods . I thank God he sent me an angel to teach me . In Poland we do amost the same salad but we also add canned corn and a spoon of mustard to the sauce at the end :) You can try it :)

Hi there! When I'm out of salad cream I like to use mayonnaise, mustard and a little bit of sugar.

Cooking with Shirani thank you lovely... I made your brown stew chicken and rice and beans yesterday it was delicious. ❤️❤️ I tried making the milk cake.. I boiled the condensed milk on med to low for three hours it didn’t turn into the caramel I was so sad.

Yes you can, but whenever I substitute mayo for salad cream I also like to add some yellow mustard and a little bit of white sugar.
