• Pork Recipes
Ingredients:
Chicken Leg pieces - 1 kg
Salt - 1 tsp
Turmeric / Haldi powder - ½ tsp
Tamarind - 1 inch ball
Warm Water - ½ cup
Black Peppercorns - 1 ½ tsp
Cinnamon - 1 ½ inch stick
Cumin / Jeera seeds - 1 tsp
Cloves - 6 to 8
Ginger - 1 ½ inch ( finely cut )
Garlic - 12 medium cloves ( finely cut )
Green Chillies - 4 to 6 medium size ( finely cut )
Sugar - 2 tsp
Coriander / Cilantro leaves - 2 cups ( roughly cut )
Vinegar - 3 tbsp
( If Goan Vinegar is not available, Apple Cider or Palm Vinegar can be used )
Salt - 1 tsp
Cooking Oil - 3 tbsp
Notes: Serve the Chicken Cafreal hot with Bread / Potato Wedges, Lime & Salad

Estrelina you can take a whole chicken and it into pieces & also prepare this Cafreal recipe no problem. We will come with a recipe for Pork Sausage in the next few months. Need good sun for drying the sausages once they are made, hence waiting for the right time.

Thomas, this recipe is generally made in a pan. If you bake, it will turn slightly dry!

What do you think about adding poppy seeds onion tomato ketchup and cashew nuts in addition to your recipe? I picked it up from another recipe. Thank you

Orville, poppy seeds, tomato & cashew nuts can be used if you're making green chicken curry. I personally don't think it will taste like Cafreal with those ingredients 🙂

Maria, KhusKhus is generally added to make the gravy dishes thicker. The traditional recipe for Cafreal doesn't have KhusKhus & since this dish is dry you won't need it, but you can definitely add it if you want. Regarding covering & cooking the Chicken Cafreal, once we have sealed the juices. We'll, we have actually done exactly that & mentioned it in the video after 10 mins of open cooking, but couldn't show the opening & closing of the pan due to the limited time we have to show the whole recipe.
