This is my idea of heaven. I could eat this soup the rest of my life and nothing else. Great version of this classic. I always leave the galangal and lemon grass in the soup when I serve it, but that's a great tip, boiling the aromatics first then skimming them out. Westerners often don't realize you don't actually eat those. Also I leave out all chilis since nobody but me likes it searing hot spicy, and I can always add chilis to my portion.

This is a wonderfull video. I have watched a lot of cooking tutorials on youtube for this specific recipe as it is really one of my favorite soups and I find it hard to get it just right.
