425 degrees! I think you mean 325. Oil smokes at that temperature! Nope

I’ve had mustard fried chicken, but never mustard shrimp. Will think about trying it. Also, I’m glad you didn’t double batter. Some restaurants do this and the batter falls off the fish. ⚜️⚜️

Try without egg. It's already coated with a wet mix of mustard and hot sauce, plus the moisture from the shrimp. There are egg substitutes but I've tried them and they suck for eating as eggs and didn't do well in a baking recipe. The egg just adds that little extra stick so the flour doesn't fall off. The only way to really know is to dig in and give it a try. That's how recipes were invented. Good luck and whatever you try, I pray it's a great success ❤
