I’ve made this several times - always turns out well. Most recently, I cut the shrooms in half instead of slicing thinly. Flavors seem to absorb more. I also prefer the texture of the fuller mushroom. Halve them!

Pete Spiro half or whole mushroom will turn the mushroom into juicy boom. I only slice cheap mushrooms.

Yea, quartering them does well for having them as a side dish. Burgers need the slices. Either way, this recipe is great.

You cooked those perfectly. I cook my mushrooms like you do but I have never used vermouth with them. I am in on this, thanks. I keep a lot of dried mushrooms on hand because I cook with them so often and I am always so glad that I keep them available to me. Oh and although good on top of a burger or steak I love them just like that. Cheers!

I followed this step by step, skipped the vermouth for red wine, and OMG I am blown away. I will be adding it to my creamed chicken sauce tonight, this is a winner

Marcella from Italy or Madeira from Portugal with your chicken then you've got a real good dish. If you're going to use the red use the dark meat chicken you'll be glad you did!

Why toss the stems? Clip the dirt end and you got 20-30% more.

Every time I do steak and mushrooms, they just go right into the pan that the steak was cooked it. I add just butter, garlic, and thyme to the steak (salt and pepper before) and then all that with the steak drippings make the mushrooms amazing.

Add a bit more butter and olive oil at the end along with a bit of pasta water along with some angel hair pasta and give it some cheese on top...

Only recently discovered this channel after I made a conscious effort to cook more. I made these mushrooms to top some sliders for lunch today and this will be my preferred mushroom preperation method from now on. I had to sub some stock for the alcohol since thats all I had, but holy hell these are amazing.

Hey Sam! 🤓 👨‍🍳 Congrats on breaking the 100K subscriber mark today!!! This is Super Delicious!!! You must make it, it's easy. I read your mind on this recipe. I pretty much do it the same way with exception to the soy sauce, as it can be a bit too salty. I substitute white wine for the vermouth, add a splash of Balsamic vinegar, then depending on the meal I sometimes add a light sprinkle of seasoned Italian bread crumbs. Boom! Yummy! 🍴😋 Keep 'em coming, man!!! Next stop, the 125K subscriber mark!!! 🍔🌭🌽🍽😎

Sparky, the alcohol dissipates leaving less than 1 to 3% Which is less than you'd find in a teaspoon of Nyquil. UC cooking with wine or beer the alcohol evaporates leaving just the wonderful Flavours behind so give it a try it won't affect any kind of sobriety unless of course just having the wine there to cook with his an issue

I saute my mushrooms in the same cast iron pan I use to sear my steaks. Backing up, I always reverse sear or sear steaks after sous vide in a bit of high smoke point oil and some rendered beef tallow, after a sear I throw in butter and garlic and baste the steaks until the butter browns. Then I pull the steaks and throw in the mushroom, usually only cut in half or thirds. The liquid given off from the mushrooms deglazes the pan. After that evaporates I actually use port wine, and sometimes some aujus if I have it and reduce that down to make a nice mushroom pan sauce, stirring in a pat of cold butter at the end when I take it off the heat. Try it sometime!

Are these mushrooms every washed before they cut them up? I’m seeing a few videos on this on cooking mushrooms and there’s still dirt on them as they’re cutting them up and cooking them

Just a little tidbit suggestion. Try using a micro grader for your garlic,instead of the Press, I find it to be quicker and easier. Micro grader/lemon zester

Helps to have a huge BTU range for it to “not take long.” My little apartment’s burners - I’m cooking a same 8oz now, takes about the length of this video. My newest favorite additives: finely diced white onion, diced jarred pickled jalapeños, and tonight may try rough chopping up a couple garlic gloves. Oh, just remember I have some mustard green kimchi, that would add a lot! “Wish I had something to put this on,” ditto Sam! May just top some otherwise half-unremarkable basmati rice with.

Cre minis are button mushrooms grown in or with some light where as white buttons are grown totally in the dark . It’s the same shroom

.. looks great.. i personally like to use my cast iron carbon steel skillet for mushrooms.. in my opinion i think it adds much more flavor and texture rather than a non-stick pan..

I agree with Roy, discarding the stems is wasteful. I always incorporate them. Sam's technique however is spot on. I do like to use Port as an alternative. Good job Sam.
