Tacos de Canasta... the least loved and least appreciated taco of them all non the less a delicious and laborious taco a stick to your bones comforting feel in every bite, it takes hours just to make the fillings of chicharron, pollo a la mexicana (chicken), mole, papa (potato), and frijol (beans). Made with a specially made tortilla and staked up high in a plastic coated canasta (basket) then showered with boiling spiced manteca (pork lard) giving then that color, flavor and helping them not stick to each other when ready to enjoy.
At La Salsa the process begins in the early hours which was the time we arrived to witness it all. My good friend restaurateur food blogger and taco specialist joined me today all the way from his home town of Tijuana, Baja California.
