For cheese selection, I advice to use generally high moisture cheese. The moisture content of cheese correlates with the melting potential of cheese. And if you are trying to use low moisture cheese like parmesan, try to make it small as possible. Smaller chunks of cheese have more surface expose to heat. Edit: you can toast the one side of the bread to form crust that removes moisture from the bread resulting to a crunchier end product.

In the Netherlands we call them Tosti. Where I work we have one that’s made of Brioche bread, Old Amsterdam cheese, spring onions, and bechamel sauce. I made it at home (with better ingredients on a skillet) and everyone who tasted it said it’s the best Tosti.

In Austria it is just 'Toast'. For usual it is a Ham and Cheese Toast, served with Ketchup and Mayo. There are different Varieties, like Toast Hawaii, Farmers Toast are also quite popular, mostly as a drunk food or easy weeknight fix..
