When I was leaving to travel to different countries my uncle (a seasoned traveler himself said) if you're hungry look for a place with a lot of locals in it most times the food would be really good, if there's a line out the door the food would be great, if you see people going past other food places and join that line the food would be exceptional. Following that advise I never went hungry or got ill from the food but had a lot of great meals.

"if there's a line out the door the food would be great" sadly this is not always true where I live because it could also mean the place put all their effort and money into marketing instead of making actual good product and what's more depressing is that most people here won't even care as long as they get to follow whatever the current trend is on social media which reinforces this bs even more sorry for this long rant

I have only seen the first 2 minutes of this post. I am in love with the silky chewy texture of the noodles already. Edit: and it warms my heart when they still taste what they are making instead of assuming, "I've done this a thousand times before."

Are the noodles actaully eaten cold, since they wash them in cold water?

After the initial cooking, the noodles are rinsed in cold water to remove excess starch, prevent clumping, and stop overcooking. Not all noodle dishes will be served warm, some are served chilled or at room temperature. If the noodles will be served warm, they will be blanched again in hot water or combined with warm sauce or broth.
