Ingredients:
Uncooked peanuts with skin
Vegetable or Olive Oil
Sea Salt(add to taste)
Instructions:
1.Dampen peanuts with water. Then put somewhere to dry.
2. Add oil and dried peanuts on med/low heat, stir constantly.
3. When majority of peanuts' color change add sea salt.
4. The amount of salt can vary depending on taste but this dish is suppose to be salty so add plenty of salt, at least enough to cover every peanut.
5. Remove from heat, drain and put into plate or bowl.
6. Set aside for 20 min uncovered, then serve.

Oh I love these - my grandma used to make this in large batches and hand them out to individual families in large recycled coffee bottles. The good ol' days :)

Hey there Mikey, So I just finished making the fried peanuts that I'll be adding to your chili oil recipe, that I just made and now cooling. I have to say, the peanuts are really good and I'm not even a fan of peanuts! I love the crunchiness and the sea salt. I'm really glad I tried this! Thanks!

Mike, just made a batch, they were great, then I made a second batch that you would like, I cooked them with dried red chilies and at the last 30 seconds or so I threw in some hot sesame oil and some garlic, OMG delicious.

Good stuff. Thanks Mike. I'll try my version. I'll use sesame oil instead. And add the dried sliced hot pepper. Make it like the spicy peanut snack, Wong Fei Hong.

I would advise that you use peanut oil, instead of vegetable oil, just to enhance the flavor. Also, if you take these pan roasted peanuts, mash them up, and add a little sugar, you have homemade peanut butter.

The thing with the holes is a steamer insert for a pot. Most cookware sets include one. This looks like an older model - no handles. My Mom had one like it buried deep in the cabinet, unused. There wasn't a lot of steaming going on in the 1960's/70's South. There was plenty of frying, but I never saw a steamed vegetable. Thanks for the peanut recipe. So far I have made your scallion oil, scallion pancake, chili oil #1, and have started using Chinese black vinegar, dark soy sauce, Sichuan peppercorns, and dried pepper flakes. In my 40+ years in front of the stove no other single source of inspiration/information has had more influence on my routine cooking in such a short amount of time than you have - not even Martha (!)

I think you mean a strainer or a colander. Ahhhhhh You should try the salted peanuts with congee. SO GOOD, it works as a great dish and seasoner with the congee, because no need to add extra salt x) also you can crush them and put it into salad, thats what my mum does in her Vietnamese salad

Gosh. To all the people who wonder about whether to toast or fry peanuts: It's a totally different texture and mouth-feel. And to all the people who are suggesting to toast peanuts in an oven: it's best to toast in a cast iron skillet so that the caramelization is uneven. You want it to look dark in some spots, white in others--like bruised skin.

Try whole green peanuts boiled in water and Cajun Season, that is how we eat then in Louisiana. Gotta go now, I have just enough peanuts left to try those fried peanuts, gotta get em before hubby does LOL!

Try adding 3-4 cloves of garlic (unpeeled but smashed) to the oil and peanuts. Classic Filipino bar snack.

im lebanese and in the levant we have something called mezza and its bunch of diffrent thing and out them is called bzourat which means nuts and its bowl of alot of diffrent fried or grilled nuts i always loved these and i wanted to know how to make em i never knew they also eat fried peanuts in china

I think that thing is called a steamer basket, or steamer insert. ...isn't there a variation of this where you also coat the peanuts with chili peppers and sezchuan peppercorns?

I prefer my peanuts boiled. They taste amazing especially if the peanuts are just soft enough and you can keep eating and eating. Boil them with the shell still on, you won't regret it. It takes around an hour to boil though.

I microwave them... dry... no oil or water. Just need to take them out and toss them occasionally. Let it cool down. Gives identical results.

I honestly love cooked peanuts more than regular ones, when you eat them raw they are just too gritty texture wise for me. Then they get in your teeth and you're all O.O I need floss now. You don't feel that way when they've been cooked. ^__^

DiMo28: Yes, he used raw peanuts, skin on. Since he did not talk about the oil I will take a neutral one, in my case sunflower oil. Canola oil or any other neutral oil should also work. I recommend not to use olive oil.
