Me personally, butter, garlic, thyme, onion, on the inside. Season with salt n pepper then stuff with lemon and put three lemon pieces on top then place in oven at 375 until cooked So delicious my fam always baked trout this way

Pro tip: instead of forking the meat off the bone, just pinch the spine where u cut off the head and lift up. Helps to support it with a spatula, but the meat will slide off the bone. Flip the filet and spine that you have on your fingertips and lay it down skin side down. Lift the spine again and you have 2 filets. Just take off the fins and 99% of the time have 2 clean filets.

Rainbows lose all color within about 15 mins of expiring. We put the fish on ice alive and drive 30 mins home on a 30 degree day. Other trout seem to fare better.

@@TheUrbanHunter. I think the most "exotic" freshwater fish I've had is walleye and I love it, especially fried. Salmon is decent, but not my favorite. I wish I lived in an area where I could find it somewhere on the menu or even at the store. Too suburban around me. That or get into fishing haha

Too greasy for me. I gut mine while I’m on the water clean it well then throw on ice. Bring home and fillet them take the bones out too. But leave the skin. Season add bits of onion sliced lemons sliced potatoes and brush some garlic olive oil on both sides. Season everything again throw on the bbq skin side down just like that and let it cook. It’s my go to way to prepare any salmon or trout especially if the meats nice and orange. Whiter meat I might changed it up but I’ve had people tell me it’s the best fish they’ve ever had from big rainbows with nice orange meat. Everyone loves the skin too once you convince them to try it.

Hi, lots of fisherman swear by frying them in batter like the takeaway’s from fish & chips! Personally I like them either smoked or bottled. I tried cooking then whole but could not get a utensil large enough. As we hunt for our steelheads during their runs from the lake up the rivers to spawn during our winter, I like to dry them overnight in rock salt, wash and dry them, rub in a little drop of sesame oil and rub them with Manukau Honey mixed with a bit of Whiskey. Let them dry a bit and then smoke them using sawdust from used wine oak barrels or Manukau sawdust. Beautiful to eat. Bottled trout should be kept sealed for six months and then eaten, great tucker. Wow. Thats a hell of a process and sounds awesome. One of the reasons I love fishing for trout/salmon is because a local in Canada let me try some of their smoked fish and it was one of the best things I had ever eaten. That sounds incredible my friend.

Our Pacific salmon from pristine waters are really good and healthy. What I love about hunting fish or game in this country is the absence of bears and snakes. What we have to be careful of in the bush and mountains is weather turning suddenly, deep natural holes in the ground and idiots! Cheers mate. Harera

My favorite is to fillet it and remove skin. Rub on Mayo. Sprinkle on salt and pepper. Rolling pin on bag of potato chips... coat fish in ground potato chips. Pan Fry in cast iron skillet with one full bar of salted butter and a little olive oil and try not to tell me that's not the best pan fried trout you've ever had in your fishing life. Caveat: I wouldn't recommend eating this more than once a year since it may help to kill you.

Partially true. You still get all the fatty acids but you def get more fat from the butter. It’s not a lot though. Most of it melts and drips off.

100% after cooking will leave you with much more meat and much less time wasted. The meat sticks to the bone before cooking. After cooking it falls right off.

@@TheUrbanHunter. I hadn’t seen it in the comments. For neutral oils, you could go canola, vegetable, peanut, grape seed, avocado, for example. Olive oil is great, just gotta keep it medium heat or lower because it smokes at a low temp.

Looks good but I would never cook with extra virgin olive oil. Coconut oil goes really well with rainbow trout. Otherwise use lard, beef tallow, or ghee. Really high heat to crisp the skin perfectly.

Why do you season the skin just to tear it off? If you use a rough sponge you can scrape all the little scales off and then season it and then eat the skin too

It soaks in some. We definitely do eat the skin sometimes. Just wanted to show the meat coming off the bone. Sometimes we score the trout as well and eat it in chunks with the skin on. Just depends on the mood I’m in and how hungry I am. Sometimes the dog gets a lot.

Rainbows lose their color extremely quickly if you didn’t notice. I caught these myself and drove home on a cold day.
