I think haleem and nihari ta beef nki mutton eta clarify kore dewa ta uchit.. I have no issue either anyone eat beef or not but then many people go to that particular restaurant and then they find out it's not mutton it's beef so can't eat it, its very disappointing. খুব ভালো এপিসোড। একটা কথা বলা উচিৎ মনে হল। শিলাদিত্য বাবু বললেন যে কলকাতায় রান বিরিয়ানি আর কোথাও পাওয়া যায়না। আমি কিন্তু Oudh 1590 খোলার আরও আগে (২০১৩ সালের আগে), সল্টলেকের Abcos restaurant-এ রান বিরিয়ানির একটি variant খেয়েছি। ওনারা বলেন ইলাইচি রান। আসলে বিরিয়ানিরই জাত ভাই। অপূর্ব স্বাদ। আশা করি এখনও পাওয়া যায়। Oudh 1590 তে আমার পছন্দের খাবার হল নার্গিসি কোফতা। আর কলকাতায় আপাতত সেরা গলৌটি খেয়েছি খিদিরপুরের India Restaurant-এ। সেরা বলতে খোদ লখনউ তুণ্ডে কাবাবির সব চেয়ে কাছাকাছি স্বাদ (যিনি এই কাবাব প্রথম বানিয়েছিলেন সেই দাঁত পড়ে যাওয়া নবাবের জন্য)।

Yarki fajlami is ok but our rich multicultural history and its culinary impact is also fascinating....i know something about what im stuffing down my gullet and suddenly fireworks on tastebuds is backed by a deeper intellectual knowledge which only enriches the experience...be it the history or science behind the dish. Knowledge is always power and im just as interested in who brought posto to us as well as why wait for the mustard seed to pop and why the particular sequence of adding ingredients. Takes me back to lab days and history too and it deepens respect and appreciation for that particular cuisine. Im now an informed ingestor not a mindless muncher 😊. The added sprinkle of self respect aids my genteel digestion. Haha...will offer to bring toothless nawabs galouti kebabs for my toothless but ever hungry 97 yr old dad...we can share a chuckle there😅. Thanks so much. Still so much to learn in my state itself.❤❤❤

Oudh 1590 is niche, refined, smart, but for the authentic taste of Mughlai cuisine, presently India Restaurant is the best, their Galauti Kebab is perhaps the best now. However, if you don't mind a rustic ambience, any eatery at Metisbruz, would be good. One may also try ZamZam at Kidderpore.

I love Foodka. I also believe that an important part of it's appeal is its comic relief. In the absence of Mir, I feel Foodka is missing a beat. If not Mir, someone else is needed to be the comic foil to Indrajit Lahiri's food narrative.
