I think it's usually better to place your camp right in the middle. This way the enemy damages your base all around, rather than just one single spot like the front of your camp where the same building gets destroyed all the time. That's also why I put the well at the back of the base... it's ok if a farm gets destroyed, but the well is extremely important. Also, I wouldn't destroy any building I come across. I only destroy his catapult yard, those are the nastiest. First focus on his big camp, one his big camp is gone and secure, deal with the small camps. A defeated enemy can't come back. That's the objective. An enemy with one small camp can always come back especially with his heroes or spells.

When playing with hard armies, destroy all his buildings in outpost (including citadel) leaving the resource building. This may help you control the seige. The hard AI will not rebuild the citadel in the outpost.

You should went for eomer first with his outlaws leaderships you can make money very fast plus you should get armory very soon
