The Fatima's Kitchen Recipe
Bharva Baingan masala ( Stuff Eggplant Curry )
Ingredients -:
For Stuffing*
Baby Brinjal - 200 gms
Coriander powder - 1 tbsp
Red Chilli powder - 1/2 tbsp
Turmeric powder - 1 tsp
Roasted Cumin powder - 1 tsp
Garam Masala powder - 1/2
Lemon juice - 1tbsp
Ginger Garlic paste - 1 tsp
Water - 1 tbsp
Salt to taste
For Curry *
Cooking Oil - 2 tbsp
Oil for frying brinjal - 1.1/2 tbsp
Cumin seeds - 1 tsp
Fenugreek seeds - 1/4 tsp
Asafoetida - 1/2 tsp
Onion Paste - 3 tbsp
Tomato paste - 4 tbsp
Ginger Garlic and Green Chilli paste - 1 tbsp
Water if needed
Salt and chilli powder if needed
Chopped Coriander leaves
