Ingredients Quantity
Coriander powder 1½ tbsp
Red chilli powder 1½ tsp
Turmeric powder 1 tsp
Chaat masala 1 tsp
Dry mango powder 1 ½ tsp
Garam masala 1 ½ tsp
Salt to taste
Onion peeled 7 no
Mustard oil 2 tbsp
Asafoetida ½ tsp
Onion seeds ½ tsp
Ginger juliennes 1 inch
Green chilli slit 5-6 no
Peanuts roasted ½ cup
Fresh coriander chopped 2 tbsp
Method :-
1. In a mixing bowl add coriander powder, red chilli powder, turmeric powder, chaat masala, dry mango powder, garam masala and salt mix well.
2. Peel the onions and make a cross-cut on each onion without cutting them all the way through. The onions should stay whole but have deep cuts to fill the stuffing.
3. Carefully fill each onion with the prepared mixture. Ensure the stuffing is packed well into the cuts.
4. Place a kadai on medium flame and heat mustard oil.
5. Add asafoetida, onion seeds, ginger juliennes, green chilli slit.
6. Place the stuffed onions in the kadai. Cook on medium flame for a 20 minutes until the onions start to soften.
7. Cover it with a lid, and let the onions cook on low flame. Check and turn the onions occasionally to ensure even cooking.
8. Once the onions are cooked, add leftover masala, roasted peanuts with chopped coriander leaves switch of the flame and mix well.
9. Side out in a serving bowl and serve hot with roti, paratha, or rice.
