I knew she would get the macaron one wrong. Every time I get a bakery macaron it sucks and some of the frozen ones are actually decent. Bakery macarons are hit or miss more often because aside from everyone in America putting flavorless oversweet buttercream as filling, if the macaron is baked just a minute too short or too long the texture will be off, and as it sits out it will get gummy or dry from the humidity level of the room. Mass produced macarons are made under more consistent controlled conditions and freezing right away actually helps maintain the freshness and texture. I'm a professional baker and when I make macaron for customers I suggest they freeze whatever they dont eat that day and just thaw 20min before they want to eat later

I think that's more common in the US because in Paris I lived for 3 years and any macaron I had from a bakery was amazing and tasted fresh. Only reason I wouldn't like one is it's flavor (i.e. coffee) but texture was perfect, delicate.

I could tell because the expensive ones are flatter and the colour is more vibrant, plus the foot on the cheaper ones is a bit overdeveloped.

I find that genuine/authentic macarons indeed have some chew to them. Technically, it depends on the their own recipe and what method they used for the meringue but still holds somewhat true

As a European I instantly knew those were the cheap macarons, they were more spherical and pale - its a dead giveaway. Actual macarons can be a bit gooey on the insight, shaped like two cookies and richer in color.
