You know I am all about the "Big Batch"! Today I am sharing a big batch muffin mix that will make your life super easy! These are a bit different from other bulk muffin mixes because they have old fashioned rolled oats in them. These give the muffin great body, texture and nutrition! With the cool mornings of autumn on the way these are a great way to pop a pan in the oven and have warm muffins of any kind for breakfast! Your options are endless as to the flavors you put inside!
This muffin mix will make 6 batches which will make 1 1/2 dozen each. 18, generous muffins that you can flavor up any way you like. This is a plain base that you add wet ingredients to and make delicious warm muffins anytime you like!
The base starts with 10 cups of all purpose flour. You can also use 5 cups all purpose and 5 cups of either whole wheat or white wheat flour if you like. Then add 4 cups of granulated sugar or 2 cups of granulated and 2 cups of brown sugar. Next goes in, 4 cups of old fashioned rolled oats for fiber and body and 6 tablespoons of baking powder and 2 tablespoons of Kosher salt. If using fine salt, only use 1 tablespoon.
Mix the dry ingredients up very well and pour into an airtight container or a jar with a tight fitting lid. Now you are ready to make muffins anytime of day! What's your favorite? Chocolate chip, blueberry or cinnamon swirl? So many options and you can make any one of them!
To make a basic batch of muffins add 3 cups of muffin mix to a bowl with 2 whole eggs, 1 1/2 cups milk and 1/4 cup of vegetable oil. You can also choose to use melted butter in place of the oil, however I find that it makes a much denser muffin. Mix well and add in what you like. A cup of chocolate chips and a teaspoon of vanilla. A cup of frozen blueberries and a teaspoon of vanilla and a teaspoon of lemon zest. The possibilities are endless.
