By all accounts when a cow lies down chewing it's cud it means it's happy and producing milk or meat.

Maybe you could name her Marida since she looks kind of red like the Disney princess. She is so cute. Maybe you could raise her to be a milk cow too. Highland cows were used as a dual purpose cow by the Scotts for meat and milk. Highlands tend to be more healthy and calm demeanor then Jerseys. And since the little calf is half of both she could get the healthy genes from the Highland and higher milk from the Jersey. Something to consider as the little calf grows.
