Kevin Malone is the tragically comic overweight buffoon (and World Series of Poker champion?) we all know and love from The Office. When he's not shotgunning cookie jars full of M&M's, Kevin sometimes treats his coworkers to the Malone family's mainstay: chili. Let's follow along and try very hard not to spill any.

Ingredients
-3oz ancho chiles, seeded and torn into 1" pieces
-1oz cascabel chiles, seeded and torn into 1" pieces
-1 tbsp unsweetened cocoa
-3 tbsp corn flour
-1 tbsp freshly-ground cumin
-1 tbsp dried oregano
-32oz carton of chicken stock, divided
-2 jalapeños, minced
-1/2 habanero, seeded and minced
-6 roma tomatoes, cored and chopped
-2 tbsp olive oil, divided
-3 lbs chuck steak, trimmed of fat/gristle, cut into cubes and chopped
-1 large onion, diced
-4 cloves garlic, pressed
-12oz light lager
-6oz red kidney beans, soaked until tender
-2 tbsp brown sugar
Method
In a large sauté pan, heat dried chile pieces over medium-low heat until toasted and barely smoking - do not allow to smoke. Once toasted, place in the bowl of a food processor. Process for 2-3 minutes, until peppers are reduced to a fine powder. Add cocoa, corn flour, cumin, and oregano - pulse to combine. While machine runs, add 3/4 cup of chicken stock, until a paste is formed. Scrape into a bowl and set aside.
Heat 1 tbsp olive oil in a large pot until near-smoking. In batches, brown beef on all sides, being careful not to over-crowd the pot. Once all beef has browned, and fond has formed on the bottom of the pot, add remaining oil, and sauté onions and peppers until sweating. Deglaze with beer, and scrape the bottom of the pot. Add remaining ingredients, stir well, and place in a 300F oven, lid slightly ajar. Stir occasionally to prevent scorching, and braise for 2-3 hours, until beef is tender. Season with salt and pepper, and serve with cheese and cornbread.

@@kevih06 The Office, they started an episode about a truly evil scene when one of the most charismatic character on the series fails and spills a whole gallon of his famous chili, which is the only thing he's good at. But at the end, he fails even at it, and it killed part of my heart. It's widely available at every country if you search "Kevin's Chili" on KZfaq.

When Babish opened the processor and inhaled the habanero dust it reminded me that I did same with scotch bonnets a year ago. Still haven't recovered. Needs to come with a warning--one of those nuclear triangles would not be over the top. Sheeeeeeeeeeeet!

We have made Scotch Bonnet pepper and sauce before, and it was unbearable throughout the entire kitchen. Though the worst one must be the Seven Pot sauce which we named, fittingly, Seven Pot Pain. It could be classified as a biological weapon

My chemistry teacher in school used to say (in German, so I'll try to translate as best I can): "Cooking is chemistry at its fullest realization." He was a small, middle-aged, grisled man with a belly, a lot of dry humour and sarcasm to boot, and a cat at home, anecdotes of which he would occasionally sprinkle into his classes. After his classes during the colder seasons, you could see him walk home in a knee-long gray coat and a hat. He was awesome.

hmmm I have to agree with that. Although you know that Babish knows how to make it, so I would be understanding if he didn't want to go through all that for one ingredient....he's doing these videos for KZfaq, after all. It's got to be a lot of work that goes into each dish, not to mention the recipe testing.

I can't stop watching and re-watching your videos, and I've taken to cooking so many of the things you've shown. I've never cooked chili from scratch before, but I just grabbed a whole range of delicious smelling chilis inspired by this recipe - I'm adding Chipotle and Mulato to the mix and keeping the whole Habanero (I like my spice). Even bought a food processor and a big stock pan just for this. I'll let you know how it goes.

Served up a couple portions and it was delicious. Incredibly rich and filling, plenty of heat, and the beef fell apart in my mouth. Totally worth the prep time over packet chili any day. Best part is I still have five or so portions left in the pan, which means I get to freeze it and break it out later. And something about re-heated frozen chili is even better than straight from the pan... the ice crystals must break things down and get the flavours into every nook and cranny or something.

Tried this recipe last weekend. I'm guessing the dried chiles my local grocery had were not the greatest quality and may have been a bit too dry (like crispy). The flavor before the 3 hr simmer was very bitter. After reducing a bit, I gave it a little more sugar, salt and hot sauce hoping the sweetness and the acid from the hot sauce would counter-act the bitterness. Success! Tasted great after that. One friend described it as the greatest chili he has ever had!

I know it’s been months since this was posted but if anyone reading this is thinking of making the chili, the bitterness likely came from not removing the seeds from the dried chilies. They tend to be more bitter than when fresh and should be removed

Daniel Roach yay! Glad it worked out in the end. I think the beer might have been a bit much here, I find that most beers don't add too much aside from hoppy bitterness, which can be good in some cases but isn't that necessary the best thing in chili (and can be achieved similarly with elements that also add other depth, like dark chocolate or espresso). I might use far less beer or maybe even wine or something instead, since it adds some funkiness while also adding more of a unique flavor to the food (other than just HOPS IN YO FACE!)

@@princessaria yeah I just made this same recipe (mostly followed) and right before a long simmer I tasted it and the spice paste was overpowering all the other flavors. I think the spice paste is accentuated by the whole beer. I saved it with white and brown sugar and garlic salt. Ended up being the best chili I've ever had afterwards.

@@Dynamic1312 ​ In his South Park video, he makes a similar chili but instead of grinding up the peppers after toasting them, he adds some chicken stock and steeps them. I did this when I made this recipe and it made it much easier to make a more cohesive, smooth paste. As the other guy recommends, make sure you remove ALL the seeds from the chilies. Also, for the beer, I'd suggest using a light lager as they are much less hoppy. I think the type he uses in the video is Modelo, which is what I've been using. This is a great recipe that I've used for chili cook-offs at my work all the time!

Yep absolutely! They just take a hell of a long time to grind, so in batches, it'd take a while.

A coffee grinder works great for dried ancho chilies. Just tear them into small bits first and pulse the grinder for 30 seconds or so. If you are lazy like me and leave a little bit of coffee residue in the grinder it won't hurt it at all - adds a nice bit of depth and flavour.

You sir are my now favorite tv/movie related cooking show. It's well made, fun to much and even quirky at times. I cannot stop laughing about the ending of the Parcs and Recs episode. I do a lot of cooking at home and for me a show hits the mark when I want to try a lot of the recipes on display. Superbowl's coming so this chili might be a great addition to the lineup. I love the fact that it's ALL hand chopped meat. Keep it up. You deserve so much more subs!

Tip: add one or two staranise when cooking the onions and keep it in the chili until just before serving. Really brings out meaty flavours

just made this today, although vegetarian. So I extended it to two onions and I caramelized one with one clove of garlic in the pan and used that as a base to then fry and deglace the rest of the veggies "to substitute" the meat flawor, I dont know if it worked, but the result was delish :D The 1/2 habanero was, lets just say, the right move.
