I'm convinced that people who hate milk chocolate have mostly eaten mass-market American milk chocolate, particularly Hersheys which literally contains soured milk (or rather the chemical that gives soured milk its off taste)

Seeding is to make sure that the chocolate doesn't seize or break, and then by raising the temp back up, it makes everything cohesive, so it stays smooth and delicious. 😊 Basically you're trying to maintain the molecular structure of the sugar crystals and maintain the milk fat molecules without them falling apart

Pretty much got it, although most of the time I've heard "seeding" used, it refers to adding solid cocoa butter (alpha-phase, IIRC) into melted chocolate, to help coax the chocolate as it cools to form the same type of crystal structure.

@@eddievhfan1984 seeding can be done with cocoa butter but most of the time seed chocolate is used at least that's the case with most of the companies and chocolates makers that I've run into in the candy industry. Source: family owns a candy store that I currently run.

Its called "seeding the chocolate" because chocolate is actually formed of crystals. Once the chocolate melts those crystals dissipate, when it cools they reform. By "seeding the chocolate" you are adding those crystals back, giving them a place to form so they don't form randomly and give you bloomed chocolate.

Okay, so can we talk about how he dissed milk chocolate in the beginning and then drops the "the dark chocolate is almost offensively sour" at the end??? Remake it with semi sweet or milk chocolate and I can guarantee it will be an improvement to the recipe

Gunnery Sergeant Hartman Most likely because he used american chocolate(or cheap chocolate). It's nothing but vegetable oil and fake chocolate, compared to other countries' chocolates that don't skimp on ingredients or quality.

some people just prefer dark chocolate. like me, if i eat my chocolate either 70% cocoa or above. its very rare i take milk chocolate which make me feel i'm eating a lot of sugars... . unlesss what i need to eat it with is very tart

Tried the metal bowl method and I can't believe I haven't done this my whole life. Also coated some of the popcorn with Caramel dip for apples and I believe I have a popcorn addiction now. Thanks Babish!

It's really pretty easy if you just use the bowl method. You don't even need to put it in a separate dish because the bowl cools very quickly. And once you start popping it on the stove with higher quality ingredients, it's hard to go back. Idk about the Flavacol though... a 2:1 coconut/olive oil mix makes it pretty buttery tasting already.

If you want the best tasting movie theater style buttered popcorn that doesn't make your popcorn soggy, you need to make "clarified butter". It involves slowly melting a stick or more of unsalted butter until it stops bubbling, then pour through a cheese cloth or very fine strainer. What you are left with his this runny yellow liquid that is much more clear than regular melted butter. Pour some of this over your popcorn and your life will be changed forever. You might also want to just search KZfaq for "clarified butter" for better directions.

"Seeding" chocolate is actually pretty simple once you know how solid chocolate forms. By that I mean it forms like a lot of solids: crystallization. There's a brilliant display of this phenomenon if you've ever managed to make supercooled water. It's really rare to do it accidentally, but it's incredible to see the entire bottle suddenly form a slushy lattice. It's not like normal ice, and if you go the other way, purifying your water and getting rid of dissolved gasses as well as as many impurities as possible (such as making distilled water), you avoid ice crystals forming irregularly, so you get pretty, clear ice. This is what happens with chocolate. Low-quality chocolate often contains a fair bit of stabilizer like wax. Stay away from that. Even a good seed is going to get ruined with that stuff. Now, your mid-grade quality chips are going to look waxy but that's the cocoa butter kinda working its way to the outside. Melting this chocolate down leads to a nice even liquid, and throwing in some well-formed chocolate to suddenly bring the temperature down will create seed crystals, giving the overall chocolate a kind of blueprint on which to build crystals, leading to the final product which is silky-smooth, instead of grainy due to irregular crystals. The clear ice is similar to this. It forms a clear solid because its lattice is aligned properly, allowing light to pass through without dissolved gasses or impurities in the way, screwing everything up. Ultimately, it's a pain in the ass to make clear ice at home, but if you're going to be serving chocolate-dipped anything, it pays off to make sure it's not grainy.
