I love how the whole point of the scene was that it was just a simple burger but Andrew just Couldn’t hold back making something fancy

In his defence he made the simple one first, and he did do a joke at the end about how it was super unnecessary to make a fancy burger.

I don't think the point of what Andrew did was to be fancy, it was just to replicate what the burger was probably actually like given that it would be super weird to have potato buns and American cheese at a fine dining restaurant on an island.

Protip: if you don't have sodium citrate, you can make your own sodium citrate solution by reacting baking soda(sodium bicarbonate) with lemon or lime juice(citric acid) in a warm pan over medium/medium low heat. $9.99 doesn’t sound overpriced at all. In 2022, when the movie was made, I couldn’t find a burger & fries at a restaurant for less than $12. Most of the time, they were about $14 or $15.

You absolutely can add water to a dry dough, it's called bassinage and it actually helps when making any bread product. This allows the dough to hold more water than if all the water was mixed in at once. Also the average burger bun in the restaurant is weighed at around 90g before the second proof.

here's what the cheese burger mean in the movie. The cheeseburger itself is a symbol of the thing that reminded Slowik why he began cooking, and how he fell in love with it. The simple act of preparing something for someone who greatly appreciates it - no bells and whistles, no frills or fuss.

I took it as middle class America as just wanting to appreciate art for art's sake rather than having some nonsensical overly intellectual meaning shoved in their face. As Margo said "you've taken all the fun out of eating" Much like how writers and artists constantly insert their political messages into their work takes the fun out of watching movies or reading books or appreciating paintings.

I just saw The Menu yesterday and my gosh this is easily my favorite scene of the movie! Margot remembering what she saw at Chef’s house, then clapping her hands the same way Chef did only to complain about the emptiness of Chef’s courses because he makes them with hatred and bitterness. She then demands a simple cheeseburger with fries which really takes Chef off guard then accepts the challenge with raw emotion. Once again easily my favorite scene because you can really feel a simpler past come back in Chef’s expressions as he cooks what he came out of before the critic brought him into the higher class. In the end, it goes to show that the best you can always make will come from personal enjoyment

Just as an FYI. After working at roosters and hand cutting the wedges, I learned that a crinkle cut ROCKER KNIFE is the only way to actually get any leverage to cut the potatoes. I prefer the one with a round blade rather than the flat blade. Edit: if you google "pampered chef crinkle cutter" you will see what I mean.

Great video, it's fantastic to see you're back to the classic Babish formula of "let's do it simple, then let's go crazy and do it the hard way" ❤😅 and I gotta say that grinding my own beef blend at home has REALLY elevated my burger game. Like, you wouldn't think it would make THAT much difference, but it totally does. Especially with a super-simple burger.

Typically, at least where I’m from, chef is a title like doctor where you need an actual culinary degree in order to call yourself a chef. So cooking can still be your profession, but you can’t use the title of chef without the degree. But again, that’s how the word is treated where I’m from. It might be different elsewhere.
