Buffalo Biriyani! Happiness is Biriyani..! ഒരു സസ്യേതര രാഷ്ട്രീയ കവിത... ബിരിയാണി..!! വിറകടുപ്പിൽ പതിയെ വെന്ത പോത്തിറച്ചി, ദം ചെയ്ത നെയ്‌ച്ചോറിൽ ചേരുന്ന ഇന്ദ്രജാലം.. പേർഷ്യയിൽ നിന്നും വിരുന്ന് വന്ന, നമ്മളെയെന്നും കൊതിപ്പിക്കുന്ന ബിരിയാണി!! 😋
Buffalo meat -2kg
Marination
Green pappaya- 30gm
Turmeric- 10gm
Oil - 10ml
Yoghurt- 20ml
Make a fine paste and add sea salt and marinate the meat and keep aside.
Masala
Onions sliced- 8 EA
Green chillies crushed - 10 EA
Garlic crushed- 50gm
Ginger crushed-50gm
Tomato sliced - 5 EA
Ghee- 50ml
Coconut oil- 50ml
Turmeric powder-20gm
Coriander powder- 40gm
Garam masala powder-15gm
Chopped coriander- few
Curry leaves- few
Mint leaves - few
Yoghurt- 100ml
Ghee Rice
Biriyani rice - 2kg
Soaked washed and strained
Ghee/ coconut oil- 30ml
Green cardamom - 4
Cinnamon - 5gm
Cloves -1gm
Bay leaves -1
Fennel seeds -3 gm
Green chillies -6
Sea salt to taste
Garnish
Fried onions
Fried cashew nuts
