This gateau is the most German of all cakes: Black Forest Cake! My idea of the perfect version has soft and tender cake layers sporting enough chocolate flavour without being overwhelming. Jarred rather than fresh cherries are my other trick, because they just work that much better with the cake. And most importantly to me, this cake is not too sweet, so you can actually taste all the elements rather than just a pile of sugar!!
To our dear German readers out there - how do you rate my efforts?? 😇

So happy you put Kirsch in the recipe. It's just not a Black Forest Cake without it!!

Nagi, you absulutely nailed this. Great recipe and very authentic. The only difference is that here in Germany most people add a whipped cream stabilizer which is a modified starch. It will keep the cream stable for days. But for some weird reason, that stuff isn't widely available in English speaking countries. Might have to do with the fact that buttercream cakes are more popular there. Here we definitely prefer whipped cream.

It depends on the type of cream you are using. If you use cream with a milk fat content of 40% or higher a whipped cream stabiliser should not be necessary. Here in Australia you can buy 'double cream' at most supermarkets which has about 48% fat content and so if you whip that cream it should remain very stable. Otherwise I have seen the Dr Oetker brand of whipped cream stabiliser in some delicatessens and supermarkets here that specialise in imported European products.

I love sweet, but I reduced the sugar from chocolate cake only using 125gr sugar and good recipe just for German people here its a bit too sweet. Definitely will rebake again this cake with less sugar , thank you 😊

@@jeny701005 not this exact recipe, but I do use bottled cherries in desserts, especially cherry clafouti, and it is important to gently press each cherry to check for pips. The last thing you need is a visit to the dentist. Ouch!!!

@@missy4663 haha I know. I’ve made cherry clafoutis before but I used fresh cherries and it still needed the work removing pits. I think I can’t make this beautiful German cake as it looks so hard to get it done 😅

Just don't be too aggressive with the bottom of the pan while making curls. I ended up scraping up some iron along with the curls. Cheap pan too probably.

My center keeps coming out dipped. The sides are coming away from the pan. Otherwise, it's actually not too difficult to make.

Kirschwasser is made from fermented cherries and usually comes at 40% alcohol. The word is made from the German “Kirsche” which means cherry and “Wasser” which means water. Look for it in the alcohol section of the grocery store.
