I'm a Chinese who doesn't enjoy stinky tofu. But THANK YOU so much for showing my food culture the respect that it deserves. I hate it when western youtubers visit a country and show the 'gross' food people eat there, turning their noses and making gross faces at other people's cultural cuisine. It's disrespectful and insulting. It is so refreshing to see a western face enjoying traditional Chinese cuisine, I'm learning so much about Chinese food from you. Keep it up!

E Liew, you must think why Western face makes your Chinese sensation. I'm also partly Chinese. My entire Chinese family reject stinky tofu. There was one family from Nanjing cooked it in the residential building. The entire 楼道 complained. This was in the 90s. It depends on regions in China. We are also not that crazy about sea food.

Just shared an information with Amy: The odour of skatole depends on its concentration. At low concentrations, skatole actually has a rather nice, sweet smell; it crops up in orange blossom and jasmine in small amounts. It's also used by Zantedeschia aethiopica. Skatole is from breakdown of the amino acid called "tryptophan". That is why sometimes these stinky Tofu smell good.

I'm no Chinese born stinky tofu eating guy. But, I do live in asia today and have tried it once before when someone brought it to a stall around cny last year and I must say I did try it for the fun of it and I liked it. Apart from the smell wafting even 100 meters from the stall, it's really very good. The waiting line was also long.

That’s really interesting, the brine reminds me of how ancient Roman fish sauce was made, it was a very pungent sauce fermented for quite some time and they used it on everything. Yet like this tofu, you’d think it would stink bad when you go to eat it but by the time its on your plate its odour is quite refined down. I guess the smell is more of the active biology happening in the fermentation pots but a quick cooking kills it off. Really interesting! I really want to try this now. Hairy tofu i admit too trying for me as moulds just make me gag, cant even eat blue cheese. But this now, this i could do! God it looks so stunning too with that beautiful black crust. I was expecting squid ink or something but purple perilla leaf mushrooms etc. amazing. Thank you for the video. 😊
