A quick, easy, delicious meal. Made in no time at all. If you like blackeye peas, I'm sure you are going to like this. Be sure you make the sauce. It is excellent on the brussel sprouts also.
1 can blackeye peas, drained, do not rinse
1 egg
2 Tbsp minced onion
1 tsp garlic powder, you can use minced garlic as well
1 tsp onion powder,
3 Tbsp heaping of all purpose flour
salt & pepper to taste
Mash up the peas, leaving a few not mashed. Add remaining ingredients. Stir well. Drop by spoon fulls into hot oil. Fry until golden. Put on platter and serve with sauce.
Sauce
1/2 cup sour cream
2 tsp cajun seasoning, or to your taste
2 tsp lemon juice
salt to taste
Stir well. Serve in small bowl beside the fritters. Also good on the roasted brussel sprouts.
Veggie Medley
2 yellow squash
1 zucchini
1 small to medium onion
1 or 2 tomatoes
1/4 - 1/2 tsp garlic powder
1/4 - 1/2 tsp onion powder
olive oil
salt & pepper to taste
1 cup Mozzarella cheese
Slice squash, zucchini, and onion about 1/2 inch thick. Cut tomato into large chunks. Add to baking dish. Drizzle with olive oil, sprinkle with garlic powder, onion powder, salt & pepper. Bake 400 degrees about 20 -30 minutes or until veggies are tender. Sprinkle with mozzarella cheese. Return to oven to melt cheese, about 5 or 6 minutes.

This meal looks so good. I love your platters. I think platters are perfect for breakfast foods, biscuits with gravy,fried eggs,hash browns,sliced tomatoes…. Yummy and everything has it’s place on the plate. Hope you have a great rest of your day. 🇺🇸❤️🙏🏻🇺🇸❤️

I am so excited! I just made the black eyed pea fritters with the sauce to go with chops and some cabbage and bacon. It is sooooo good and simple! I cannot say how happy I am I found you. It's like cooking with my mama again!!❤❤❤

Oh my goodness you make me soooo hungry....lol. I gotta try those blackeyed pea fritters and that sauce. I'm not a fan of Brussel sprouts per say....I'd love a bite of the ones you made though...lol. I'm always so happy when a video of yours pops-up! I'm going to have to make those fritters. I just made some with zucchini flowers. Have you ever tried those? They are really good. I sprinkle them with a little sugar. I laughed they way you said the veg dish was healthy, until you add the cheese cause well, we like cheese lol I'm the same way, I LOVE cheese! Nothing better than roasting vegetables, they taste so much better that way. Hope you and your family are doing well. Have a blessed Sunday!

I just had black eyed peas and fried green tomatoes last night. Never thought about making fritters from black eyed peas. Anxious to try your recipe. BTW, I love your outfit.

Thank you Karen for these delicious recipes. All of it looks so tasty! The fried pork chops are just beautiful! I think, after watching you fry different foods, I need to add more oil when frying. Foods are always sticking for me, and I lose 1/2 of the batter in the pan. Also, the roasted veggies look so, so good, and I might be inclined to roast the brussel sprouts with them.The black eyed pea fritters are new to me, and I must give them a try too! However, we could eat those black eyed heated , plain, right out of the can! One lucky husband and family, for sure! Blessings to all!

If your food is sticking it's not ready to turn. Leave it a minute and when it's ready you can turn and it not stick. Don't mess with it when you put it in the pan. I shallow fry alot. Thank you so much.

I will try those fritters! One time I forgot about my brussels sprouts and left them in a little too long, well they were delicious and now I make them like that every time!

I am making pork chops, black eyed pea fritters, with your sauce, potato salad, a can of spinach and a can of turnip greens mixed together with 1 TSP of butter, salt&pepper added. It’s just the 2 of us. Left overs for lunch the next day. Ty for the inspiration ❣️

@@KarenJonesFoodFamily I'm having a relaxing day. One more week before we go back to work. Summer is almost over for me. 😭😭😭😭 You know, I always either char my brussell sprouts or undercook them.🤣🤣 I still eat them. They are too expensive to throw out. I usually cut them in half and drizzle with olive oil salt and pepper. I have NEVER cooked my pork chops with breading. I use my moms recipe...marinade over night then cook in a bit of water and oil slowly. They turn out tender and savory. I always pair it with pigeon peas and rice. Sauteed apples pair good with pork chops too.

My goodness how I love black-eyed peas 😋 One of my favorite dishes is Black-Eyed Pea Dip which I was introduced to at a book signing a few years ago. This is the first I’ve heard of fritters. Goodness gracious that all looks delicious! I have never made black eyed pea fritters, but I will be!! We love fried pork chops, but I’ve been crushing up a can of those French fried onions and dredging the pork chops in those. A TON of flavor. Always love your videos!

It always makes me smile when KZfaq videographers constantly worry and they grab several spoons or worry what others will say because they taste food with their finger. If we're all honest we don't bother with switching spoons or tasting with fingers we just do it. We're feeding our family, not cooking for a restaurant and it's not like you're spitting in it or coming in from mucking out animal pens cooking with filthy hands

Interesting meal. I must say - Southern cooking is something new for me! I do NOT like Brussels Sprouts, however, I believe that's b/c my mother made them wrong (boiled). I have since had them (once) pan fried in butter and they were better (I could swallow them haha); The peas recipe seems interesting but one thing you do that baffles me, however it always turns out well, is how LONG you fry your pork chops. Perhaps that is what I do wrong - I don't fry them long enough in enough oil. I need to find your email address (I know you publish it) and send you a photo of the mASSIVE cabbage my husband brought home from the organic gardener in the town just north of here. It's the size of three heads, I swear. I'm going to use it to make your pork chops / sausage / onion / potato one-pot recipe, which I made a few weeks ago but didn't have cabbage at the time.

I normally throw it away. The only oil I will reuse is oil I make fries in. Then I put it in an empty oil bottle and refrigerate until I need it again. I will reuse it 2 or 3 times then throw it away.

PLEASE tuck your thumb in close to your palm before swiping food from a knife blade. I used to just swipe food off, thinking nothing of it until one day I did it again and ended up slicing the top of my thumb down to the bone. I wasn't even pushing hard or going fast, I keep my knives sharp. All it takes is a second to do damage. Now I automatically tuck my thumb

Hey Karen.. can we say yum!!! I’ve never tried or heard of pork rinds being used (OHio girl) but am def gonna make this pork chop dish. Is it just one big bag of pork rinds crushed up or do you buy them already pre-crushed from the grocery store?

One large bag. You can crush in food processor or gallon zip bag & rolling pin.

Just 2 or 3 minutes. Just long enough to brown. Everything is cooked anyway. Just need to cook out the flour taste and set everything together.

Have to chuckle each time I see your bare feet. Have been a bare foot gal all of my life. Not very spicy food either. Had a dentist advise one time that I have a lot of taste buds,maybe you too! Happy,delicious cooking as ususual.😍

@@KarenJonesFoodFamily From watching your videos, I've gotten the blending fork, White Lily flour, Ya'll sweet tea, the Progressive International container's, Pig tail, Dish drying rack, I've made your Corn Flake Candy (good ,but, sweet, I'm a diabetic.) I got the stuff to make the Pecan Pie (which looks easier than I thought it would.) I got the serving dish from Pioneer Woman. On my list is the set of cookware and the wood butcher block (I like the large one) I'd really like the measuring cups but that's a bit extravagant for me. Maybe Santa will bring a set. I'm sure there is something else but I can't think of what it is, now. I need to go back to school soon to pay for all this luxury. You are a real inspiration; I'm learning how to cook.

That's the first thing I do when I get home, take off my shoes. I have always gone bare foot. In the winter I might wear socks. 😉
