Maybe it me but i wasn't able to discern between cheap machine espresso and 10k dollar tools laboratory shot. In my opinion its like wine tasting aka BS and 99,9% of people cant taste s.... even if its real. Only thing that matter is quality of coffee if its bad, burned, mouldy or whatever it always will be bad coffee. I rather buy expensive bag of good coffee then another needle thing that should achieve what? after tampering and injecting water at high pressure? So i dint even understand part about uneven distribution when portafilter is filled by water unless your coffee machine is broken.

It has to do with the Gaussian distribution vs. A convolution. If you take the Fourier transform of 5 tiny needles moving through a "sandbox" aka coffee ground bed, then there will be "rivers" that preselect where the coffee gets routed through, vs. a Gaussian distribution like dropping them in a random pile centered around the Z axis. This homogenization is by it's nature random. Thus eliminating all paths of least resistance.

I like how we went from shaking grounds when you tap it to settle them down, to poking randomly, to mega needle tech and now we're reinventing the shaker.

Tapping to settle the grounds actually performs worse I believe, because it causes the finer particles to travel to and settle at the bottom. You don't need the blind shaker for this, but the goal here seems to be shaking thoroughly to create even distribution. But yes, this is undoing a years-long trend toward all the needle based distribution tools.

Cafe Bustelo isn't instant, it's just ground coffee. I also hand grind but keep some cafe Bustelo in the cabinet for days I don't quite feel like it, but more so because I CANNOT find decaf whole bean where I live to keep both caf and decaf in stock... It is hard enough to find whole bean coffee at all let alone decaf.@seraphim-enjoyer

I suggest for you to get a moka pot. Walmart sells cheap (3-cup espresso equivalent) pots for like under $20 that performs literally the same as the bialetti brand. Also get an aeropress mesh filter to pressurize more thus getting a higher extraction 😂.

​@kylemessineo8542 I had a similar problem a while back but couldn't justify the cost of a good electric grinder. So I opted for a manual grinder, the 1Zpresso J-ultra. I was gonna get the j-max but it had just been replaced with the ultra iirc. For $200 usd msrp it's hard to be the quality and price.

@@pannoncannon thanks for the feedback, I have a manual burr grinder which I like but it’s a lot of work cranking out 18-22 grams for espresso and 35+ G for pour overs! You know what I mean 🤣 every coffee nerd says it’s all about the grinder and not the machine so if I gotta good electric grinder things would be much better. Which machine do you have?

I learned how to properly distribute coffee from the grinder to the portafilter by shaking and breaking clumps back in 2006 or somewhere around there, at a barista course in Sweden. Some 12 years later, the Internet was convinced that every shot of espresso made for the past hundred years before the needles were all channelised 😂. I tried all the tools, but never noticed any difference in extraction compared to my good old shake and break method.

I've been grinding into a 58mm dosing cup, inverting the portafilter onto it, shaking 5 times, The flipping back the right way, shake & tap to settle, then tamp Doing so for years. Consistent de-clumping every time.

As a coffee drinker and a brickie I actually know why this is. 😅 Basically when you use pins you vibrate the grounds and this causes larger particles to settle and smaller lighter elements to rise. same thing when you vibrate concrete. However shaking it up mixes so that small to larger particles are mixes essentially by using needles you make a natural water drain and allow water to run straight through. The best technique would be to add the grounds to a mixer or a cup turn to one side and use the needles to rotate and churn

It's almost as if the humble concrete mixer, being a rotating, finned, offset drum, makes more sense for mixing stuff, is cheap and easy to manufacture, and largely has not been improved in 120 years, makes more sense than some crazy clockwork contraption with a gazillion needle agitators.

To add to this I've been thinking I reckon you could get a better extraction by grinding coarser and lowering the pressure . You would certainly get a smoother run through of water and a more evenly rinsed or extracted coffee with the needle method. However for finer and uniform grind and high pressure a tossed method would mix coarser and finer particles allowing a steady rate of flow. My logic to my first comment is that for concrete the idea is to vibrate and allow air to escape and for the concrete to essentially level out , and shring yes vibrating concrete makes it shrink by 30% of its volume essentially packing in tighter and denser . For coffee grounds however we don't want it packed super tight and dense we want it squashed tight with gaps between the particles for flow and extraction. The mixer essentially rolls and airates allowing small and large sand/stone to be evenly incorporated with cement so my theory is for coffee we want to tumble the grounds with a fraction of moisture so that the larger particles and smaller mix evenly then we want to tamper it without vibration then lower the pressure a tad closer to 8 bars of pressure . This should give far more uniform extraction than anything currently used . But this is just a theory I've got no coffee equipment. I have a decade of construction experience and a few years experience working in coffee shops and a passion for great coffee. More so it's the science and the origins of that coffee. I can also to some extent blind tell the variety, country and altitude of each coffee but nothing crazy

The other reason is in this method they don’t even out the coffee, there is less around the edges where the water begins to flow at the start and work its way in. This is much better than the first drops coming out of the centre

I’m a bourbon/whiskey nerd looking to get into coffee and I notice something similar in my hobby. In bourbon/whiskey there’s swirling for aeration or leaving the liquid out for 10-20min to let air open it up, but there’s a glass that’s shaped like a beaker with a ball/lift in the middle. Like the middle piece you have but cut in half. It’s made to rock the liquid instead of swirling it for more controlled aeration. Very interesting stuff

Protip: if you have a dosing up and lid for a tamper you can replicate this with no extra spending. I use the lid from my Normcore tamper and my Niche Zero dosing cup to shake grounds and it works great

Does it get the grounds even distributed on the first fall into the portafilter? From what I remember of the Lance Hendrick video, it was the evenness of that initial dump of grounds into the portafilter that made the significant difference, which the curved walls of the Weber would seem to ensure.

The needle tools were for grading the larger particles upwards in the stack so they didn't produce compression shadows in the lower grounds, they were never for trying to homogenize the grounds and would work precisely the opposite. The best tool for homogenizing the grounds would be a vibrator like used to compact powder in ammunition cartridges. The aeration flow of the tumbler doesn't need the stupid plunger cup piece of crap that's just for showmanship... a good Erlenmeyer shaped decanter can pour the grounds in just fine... the crucial part is the tapping.

Using a regular dosing cup has the same problems as grinding directly into a portafilter where it's so uneven you need to do something to distribute it besides tapping.

I mean, there's plenty of coffee hobby methods that _are_ useful. The needle thing just isnt one. Best bet? Actually study and test before spending the money. Nothing wrong with making it fun. It's just, if you wanna pull the best shot, act like it.

The needles push the coffee around, the shake method basically exerts force on the clumps of ground coffee forcing them to break apart. The more shaking, the more the grounds separate. When tamped instead of having super tiny pockets of clumps, the shake method gives you an even tamp where all the grounds are compacted evenly across the ENTIRE puck from top to bottom/left to right/etc.

The needles have been the things for years. (Maybe a decade now?) And we (used to) have a very nice and simple explanation as to why they were the best, which is why it's so surprising that a simpler method is able to outperform them

re: why shaking is better than needles If your goal is homogenous distribution, needles have "dead zones" where they don't mix as effectively. It's basically the same reason you need to occasionally take food out of the microwave and mix it up manually if you want it to heat evenly.

Not exactly a good comparison to a microwave. The tool distributes grinds around, a microwave just spins the whole only heating the contact surface and slowly heating the inside food. The espresso is so fine there shouldn't be any dead zones unless it's clumping. This is just another money grab in the espresso world

I worked 6 years as a bartender and i can say to everyone with full confidence : making a good expreso coffee doesn't have to do with making holes in coffee so it looks nice when it comes out the expreso machine. Its all about the coffe you use , the temperature of expreso machine , the way you grind your coffee , temperature of the ambient you are making the coffee and the temperature of the coffee cup . I use to have people drinking 2 or 3 cup of expreso without sugar just because was made perfect 😊. Practice makes you better not the tools

The fines lodge themselves into the pores/jagged edges/rough surface of the larger grounds. That’s the theory of shaking, I believe. It kinda fuses the fines and boulders together to make a more consistent particle size. I almost wonder what would happen if you shook the grounds, the used WDT

If i had to guess I'd say that the needles don't move the particals around enough and allows for the smaller bits to clump at the bottom while the more coarse rose to the top. Shacking gently allows for a more even spread of partical size from top to bottom.

We were playing with needles in 2012. In a cafe setting they work but in the end I just to the tap method on top the side and tamp it’s consistent and fast and that is what matters in service

i personally shake the coffee ground at a magnitude of 2.36 points on the richter scale, and then press them using 4000 RPM settings on a centrifuge, to get an extra 0.0032 mls extraction.

It’s language used so people get the idea. But all big (and most small) coffee companies have research and development departments it’s how they develop products to make money. These people have real titles but it’s all good. Most people have some ridiculous title to make themselves feel better about their lives. How many managers can 1 business have?

Quick thought, I'd love a video of what percentually increases the espressoshot. Something like: what kind of beans (40%) Good machine (40%) Tamping (adds 10% Using needles (2% vs shaking 3%) Etc. Since doing these needles seems in theory only add a small amount. I don't have any idea tho I dont own an espresso machine, but it would be lovely with a breakdown of what actually makes good coffee

i think the needles make paths more possible for the water to just run through rather than when it's shaken and the path is more random which catches onto the coffee better.

Because the needles swirl the grains around but they dont bring the ones from the bottom up to the top. Theres a reason that homogenisation in chemistry is done by basically shaking the shit out of a chemical in a volumetric flask(inverting several times) its because it allows an interaction between all layers of the solution along a both vertical and horizontal axis instead of just horizintal like the needles do
