As you may notice, the BBQ chicken frame restaurant was opened in 1993, that is during the “Great Laid off” era. Many many Dongbei workers lost their job at that time, so this is the reason why the chicken frame became a kind of "traditional food". It's a sad story behind this delicious food, but also proof that shows how optimistic Chinese people are, and how hard they will try to make their life better.💪

It used to be poor people's food before 90's but now represents one of the signature dish in Dongbei. It is the representation that Chinese always respect food and don’t waste any part

@@mikewant5230 They are busy doing other things such as rebranding Chinese New Year, which all Australian politicians, including the once great Kevin Rudd, now refer to as Lunar New Year. The Chinese diaspora is the reason that the festival itself is celebrated in so many countries. Some of us reject the linguistic games being played in the Western World. I can’t imagine it would be very easy to be an English teacher these days.

I totally agree - the fact that every part of an animal is used in Chinese cuisines is a a great way to reduce food waste, and, you get to unlock many unusual delicacies you'd probably never thought of before! 😉As usual, I love the vibe when you dine with the locals.👍

Here in UK you can buy a massive box of chicken carcasses for £2.50(used to be free until they realized a lot of ppl starting asking them for it), we use them for making our meat broth in our takeaway for cooking dishes and yeah even here there's a lot of meat left on them. We usually strip of the meat at the end of the night and use it to cook a midnight snack for everyone.

This will be my heaven. IM ADDICTED to eating bones especially chicken bones. They go so well with beer and alcohol in general. In Melbourne there's this Chinese snack shop that sold fried chicken bones with spices as a snack, when I ordered that the waitress looked at me numb shocked. She said she never ever saw a foreigner order that item before 😂

Back in day when I was a highschool student,the noodle's price was 2.5 RMB in LSJ. it's my lunch meal🤤 So the pleasure of eating is not in eating meat, but in "sucking", in the tightly attached parts of the ribs, searching for the tender chicken meat bit by bit, just like searching for treasure hidden in a cave in the jungle, happy and excited. Eating meat is not the main point, finding meat is. Shenyang people understand this joy most deeply, so we consume half of the country's chicken frame every year in ten thousand ways. There are Deep Fried Chicken frame, grilled Chicken frame, cold mixed Chicken frame, iron plate Chicken frame, smoked Chicken frame, spicy stir-fried Chicken frame, braised Chicken frame, sauce Chicken frame.......

There is a shop called "North China Homestyle Deli" at Eastwood sells chicken carcasses(jijia) and variety of north-eastern style cold dishes. But they only had smoky flavour jijia. They were delicious! I used to visit a lot when I was still living with my friends. We drank a lot and we ate the carcasses as finger food for beer :D

I think a lot of strange way of eating that chinese people invented are just for fun. We all were told not to play with food when we were kids, but this kind of food like skeletons and rabbit heads are more like toys with meat. They're comparably delicious as other types of food, but what makes it special to me is the process of breaking down a delicate structure where all part magically match with each other. Just like how kids like to disassemble all kinds of staff

It's the poverty. My grandparents had to eat tree bark during ww2 in the japanese occupation of singapore, so i can see how these chinese dishes evolved from being necessities of using ever animal part, to now being looked on as delicacies

For a minute, I thought you'd be eating the bones. It all looked delicious, but the barbecued chicken frame really intrigued me. I have a friend who bakes bones from all kinds of meat carcasses and baked them until they're dry and eats them like potato chips. I was horrified when she told me this, but one day I tried some baked beef bones and I enjoyed it. It just crumbled in my mouth and the spices she used at the end of baking made it so yummy. She served it with a sweet and thick dip with coriander; I can't resist coriander. I'm really going to aim for a visit to China. My Son is taking me to Japan but I want to go to China first now. He's not on board with that, so I'll take the trip to Japan then save my money and visit China myself. I've been saving your videos for reference. I feel so connected to China for some reason; perhaps I've lived there in a past life 😅 or perhaps it's just because I've always been fascinated by China. You're definitely my favourite channel to watch! Thank you!

I was having a hard time learning Cantonese and when she said I'd need to learn Mandarin, I didn't accept the job and 43 years later I still regret not taking it. I've always been fascinated with the culture and the beautiful people I'd meet living in Toronto who were originally from China. I will visit China before Japan; I've already told my Son this. I hope next year I'll have enough saved to spend a decent amount of time exploring China. It was also my Fathers favourite place to visit 🧡

Warning: watching Amy while contemplating dinner can be dangerous to your kitchen…😁 I actually have a 1/2 chicken marinating. Can’t BBQ it outside…we’re currently having a snowstorm (10-12+inches by morning, and it’s much windier than they forecast.) my hours are flipped because of a 中国画课 at 3am my time. Trying to decide exactly how to fix the chicken because I want to make sure I eat by midnight, so I can be “digested” before class. Hmmm…noodles, rice or fried rice? One of my late Son’s friends sent me some black sesame “tahini”, all just crushed sesame..oily. I’ve tried adding a spoonful to different dishes, like oatmeal, as was suggested…no..just no. Any other suggestions to make it more palatable…I was told many older folks in China have it daily because of health benefits…including supposedly stopping your hair from turning gray..😂. I’m WAY past that point…and have blue hair now anyways. But I can always use the antioxidants and protein…

U can use tahini like hw u use sesame sauce in those Chinese noodles recipe, just mix the tahini well because sesame naturally has oil (same as fresh peanut butter)

1 tablespoon tahini 2 tablespoon soy sauce 1 tbsp oyster sauce 1 tbsp black vinegar Pinch of salt OR 1 tspn fermented bean paste Pinch of white pepper Pinch of msg 1 tbsp minced garlic 1 tspn spring onion 1 tspn fresh chili slice 1 tspn chili oil Wheat noodle

Tahini is usually thick and sticky, so usually we put water in little by little to make it thinner, plus salt, then you can mix it with sliced chicken breast, cucumber, onion, etc, add soy sauce, chilli oil to make it more tasty

Shenyang was hit really hard around Y2K. It used to be a center of state owned heavy industries, and lots of people were laid off during the privitization wave in late 90s in China. During that time, cheap proteins like chicken skeletons became popular because folks couldn’t afford actual chickens. It was a pretty tragic story unfortunately, sorta like budaejigae.

You're not the only one who didn't catch what the lady at the restaurant said, if not for the subtitles. 🤣 As a Southern Chinese always found it difficult to catch what people are saying in Mandarin when speaking in a northern accent. I would've been stunned at what to do too

You can actually get it at Chinese-themed skewer/BBQ restaurants in the US, such as Friendship BBQ in Boston/NYC. Conceptually, it's still just chicken, but more for gnawing off the bone rather than pure meat. Kind of like how riblets or rib tips are eaten in Chicago/the Midwest. Small amounts of meat that are left on bones which would otherwise be thrown out are repurposed in a delicious manner instead.

I love you videos so much, really exploring customs and cuisines of china that I wouldn't have known otherwise. Also the people you meet are so friendly. Maybe bc the culture is stranger danger in the US, but how do you suddenly meet random strangers and all agree to go out and eat together?? Do you just go up to them and ask about the cuisine? Would love tips for when I travel abroad :)

Shenyang is my hometown and I am so happy to see you enjoy the food there. My fav type is smoked chicken skeleton. It’s hard to find in restaurant but you could find in the night market or farmers market.

AMY!! This is probably one of my most favourite videos you have made. It hits my spot exactly. Here in Dallas TX I love to eat the chicken carcass left over from Costco's $4.98 chicken. There is a lot of meat left and wit a bowl of Ramen it's heaven on earth!! BTW you should do video about the difference between Asian Chickens and Western (UK, USA and maybe Australian Chicken). there's a hug difference which I'm sure you must have discovered by now.

That's because in the old day, chicken is a delicacy and luxury item! nothing goes to waste and for a lot of people, that's the only part they can afford, as time change, this type of dish become kind of tradition there!

When I was a little boy, I lived with my grand-parents in the country-side. Even after I went to elementary school in the city, I still return to spent my summer time there. The greatest thing in summer was that my grandpa would pick one of the young roosters, which they brought in as little chicks during the spring(male chicks are not welcome in big farms so they sold them really cheap to smaller farmers), do the butchering himself and then steam it as a whole for me(only seasoning was to rub some salt on the skin). The steaming process created a super concentrated chicken soup in the plate(super umani), and I ate the whole chicken with my hands. Every time I finished every bit and only left the bones. Those are some great free-run-local-sourced-organic chickens I had haha!

​@@21sausage9Agree! And there's another similar concept as eating crayfish behind, when you are eating chicken frame with your friends, none of you get the chance to use cellphones as both hands are occupied, so all you gonna do is chatting and laughing with your friends

Omg 😱… it is my home city !!! I have lived in Aussie for 12 years now… I love the chicken frame 👍👍👍… they are just so delicious!! We have a saying no chicken 🐓 can leave Shenyang alive ❤❤ great experience!!! You should explore more.. there are so many delicious food there ! Good luck Amy xx

As a die-hard foodie born and raised in Shenyang, i'm quite blown away to see a blonde girl trying this bony delicacy from my hometown! I miss the pure fun of taking my time gnawing them bits of meat off those tiny bones. Btw, you broke up your Jijia like an indigenous pro! Keep up the good work!

I have to shout out to the chicken skeleton vendor near my neighbourhood in Harbin, whose shopfront is small, but great. The essence is their seasonings.

My grandma used to teach me how to each off the bone. I always found the meat around bones way more flavorful and most likely more nutritious than eating just muscle meat.

soooooo delicious ! i've been craving it since i was young!!! And i really want to recommend the barbeque in my hometown, Shandong Zibo, it goes with a wrap and a tiny bbq pit on the table, which becomes very popular all of a sudden🤩

In Malaysia it's normal. They sell a lot of these at night markets or food bazaars. We call it rangka ayam.

Our Chinese love food so much, think about very different ways to enjoy the food! When i lived in Brisband Australia , I bought chicken skeleton in China town for soup cooking with verg.. each time at least two chicken skeleton, very yummy.. ! In our Hong Kong, we do these in the same way but the whole chicken, we call it 'Hand Shake Chicken'. Blondie, if you come to Hong Kong, you could try it . Enjoy food paradise in China!

That's great. I agree that using the whole bird is a good thing to do but not just because you don't want to waste parts of an animal but because it can be super delicious! In the US for instance people are put off by the idea of eating offal and oxtail and pig's feet for instance, but those things are real delicacies if prepared well. Why throw them away? So many cuisines have dishes prepared by people without a lot of resources, so nothing must go to waste, and they end up being classics and wonderful. Imagine, lobsters used to be 'trash' catches and now they are expensive high end items. Chicken skeletons are well used in many cultures for chicken broth - definitely not trash. It is all about perception. People shudder at chicken feet but love to have dozens of chicken wings. BBQ marinated chicken gizzards and livers are great. Eat on Blondie!

Chicken Carcass. I use to put various chinese herbs with chicken carcass to steam soup. Add 1 tbsp light soy sauce and 1 teaspoon sugar. The soup is good and healthy to drink twice weekly. So nourishing and cheap (budget) to effortlessly drink soup. One carcass can serve 2 to 3 bowls of soup. Or use carcass to boil chicken porridge for 2 to 3 servings. Yes! Chicken carcass can be very useful. Can use it to boil noodle soup adding other ingredients.
