What is the logic behind choosing D dim and E dim over Dm7b5 ?

There is no logic, it is a question of taste. Some people like strong condiments, others like their food plain. Also our tastes change throughout our lives. We might tire of a certain dish. There are other triad pairs suggested in the Pdf, that are less spicier than these 2 for the D-7b5

Dm7b5 is R b3 b5 b7 , Ddim gives R b3 and b5 , Edim gives 9 11 and b13 , both Ddim and Edim are in F melodic minor , F melodic minor gives Fm6 and Fm6 is made of the same notes as Dm7b5. or something like that ;)
