I made a cake with Oreo and cheese cream in a sponge colored blue, a good friend of Oreo. Of course, I decorated the top with Oreos to finish it off. Cute.
Recipe (for 4 pieces)
Ingredients:
Blue sheet sponge
Vegetable oil for coating the baking sheet, to taste
1 g butterfly pea powder
50 g warm milk
40 g vegetable oil
49 g cake flour
25 g skim milk
5 egg whites
55 g granulated sugar
Cheese cream
85g Cream cheese
35g sugar
15g sweetened condensed milk
200g fresh cream
12 Oreos
How to make:
Bake the blue sheet sponge
1.Lightly coat a baking sheet with vegetable oil and set it on a 27cm square baking tray.
2.Add 50g of warmed milk to 1g of butterfly pea powder little by little and mix to avoid lumps. It is best to filter it through a mesh once. Leave to cool.
3.Add (2) to 40g of vegetable oil and mix.
4.Sift together 49g of cake flour and 25g of skim milk and mix.
5.Beat 5 egg whites with 55 g granulated sugar to make a stiff meringue.Whip on high speed, then beat on low speed for the last minute or so to adjust the foam.
6.Add about 1/3 of (5) to (4) and mix thoroughly with a whisk.
7.Add (6) to (5) and mix softly so as not to dissolve the foam.
8.Pour (7) into (1) and level it.
9.Tap to remove any large air bubbles.
10.Preheat the oven to 190 ℃, lower the temperature to 170 ℃, and bake for 13 minutes and 30 seconds.I switched back and forth at 5 minutes and 30 seconds during baking because my oven has a tendency to bake unevenly.
11.After baking, cover with a baking paper and turn over. When the heat is removed, cover with the baking paper to prevent it from drying out and allow to cool.
Make the cheese cream
12.Add 35g of sugar and 15g of sweetened condensed milk to 85g of cream cheese and mix.
13.Gradually add 200g of fresh cream and beat to desired consistency.Put the mixture into a piping bag.
14.Cut the cooled sheet sponge into 5cm wide pieces and place them on the mousse film.
15.Place an Oreo in the middle of the cercle.
16.Cut (14) into the appropriate size and place it on (15) as a tube.
17.Squeeze the cheese cream from (13) until about half full.
18.Fill the tube with crushed Oreos and squeeze the cheese cream again.
19.Decorate the top with Oreos.
20.Chill in the refrigerator.
21.Remove the cercle and mousse film.
22.Done. Milky and delicious. I'm glad I made it.
