The baffle plate is a game changer.. every traditional I’ve ever used I get a char on the fire box side of the brisket. One thing I would like to see if I bought this smoker would be a fire box clean out door or valve. That little 2” lip would tick me off trying to get all the ashes out haha.

Should tuning plates run all the way to the stack or just a certain amount of them?

If you run them all the way you completely block off the flow. I typically set mine as a reverse flow (all plates toward the firebox) that way you can space if needed
