Make this when it’s Sunday and you’re not leaving the house. One spoonful of this smoky-spicy guajillo braising liquid and you’ll understand how complex dried chiles can be. When soaked in hot water and blended with aromatics, they create a base so flavorful you don’t even need stock. The chile purée may seem like a lot of liquid at first, but don't worry: Keeping the pot slightly uncovered as the ribs cook will allow the sauce to reduce and concentrate.

That's because they use Diamond Crystal kosher salt, which is the least salty salt. So they use a ton.

@@IMakeupStuff the other thing I always have to adjust and the case is the same with my friends are American baking recipes. Precisely the sugar! Is there a difference in sugar or is it just that American culture loves sugar? If I dont remove 3/4 of a cup it will be too sweet for tastes here.

@@yams7377 They really aren't. I feel like most people don't know how to properly season. If you think that's too much salt then your food is in danger of being bland. It's not a fine salt, you need a lot.

@@TumblingPebble This is so frustrating. People spend so much time making bland food because they don't want to oversalt it. What happens? They try to make up for it buy adding heaps of black pepper to every single dish they make.

@@johnclarke1571 John Clarke That's what you need on a rub. The salt is only on the outside, you are only covering the surface area with seasoning. You have the entire interior that will not see any salt. Not to mention the fact that you will lose some salt to the pan and the juices.

Just be careful! A lot of these recipes will set off fire alarms if you don’t have a good oven vent/a window open. This recipe looked pretty smokey when he was browning the ribs

Andy is one of the best at making complicated things seem less complicated*. “Succinct” is a good word for his explanations in the kitchen. *and by that, I just meant he is good at simplifying his explanations for a lay person. Some BA people can get a bit lost in the weeds.

Wow my mom has been making something like this for years. We're latino so we use guajillo and passa chiles and instead of cinnamon it's achiote and instead of yogurt, just tortillas and lime. Feel like you snuck into my mom's cookbook and plucked it right out hehe

My goodness, this was so good! I used potatoes and carrots instead of squash. I also only cooked mine for 2/2.25 hours and ended up adding another 2 cups of water when I added them.
