I'm BooneBake.
Today I will make a delicious butterscotch flavored walnut and chocolate cake that my son really likes.
I made it in a large mold and cut it to make 9 small pieces of chocolate cake.
Homemade butterscotch sauce is truly an all-purpose sauce.
I made homemade butterscotch sauce and used it in the mousse and syrup.
The crunchy walnut caramel used for decoration was also made very simply with butterscotch sauce.
The walnut caramel I'm showing you today can be made separately and eaten as a snack.
If packaged nicely, it makes a great gift.
Needless to say, the combination of butterscotch sauce and walnut cake is breathtaking... haha.
It may seem complicated, but making the butterscotch sauce is half the job.
So, if you want to eat a very luxurious chocolate cake, try making it.

(or 6cm*6cm*4.5(H) ,,,9 pieces)
● Chocolate sponge cake
( mold size : 19.5cm*19.5cm )
4 eggs (215g)
95g sugar
a pinch of salt
15g Honey
5ml Vanilla extract
50g milk
Walnut powder (100% ground walnuts)
(or almond powder)
30g cake flour
1 g baking powder
15g cocoa powder
13 g cornstarch (can be substituted with flour)
40 g unsalted butter
● Vanilla Butterscotch Sauce
20g unsalted butter
50g brown sugar
55g condensed milk
65g heavy cream
3ml Vanilla extract
● Vanilla Butterscotch Syrup
50 g hot milk
20g vanilla butterscotch sauce
1g instant coffee (optional)
● Butterscotch Chocolate Mousse
55g Dark chocolate couverture
55g milk
80g vanilla butterscotch sauce
2g gelatin
160g heavy cream
● Dark chocolate ganache glaze
80g Dark chocolate couvertureg
80g heavy cream
1g gelatin (optional)
● Walnut caramel for decoration
40g vanilla butterscotch sauce
7g water
50g walnuts

I can bake bread. I can make very good cookies and cakes. I can make my own chutney's and mustards. I even make my own icing sugar and brown sugar. Two things I can not do is make Puff pastry and Caramel sauce. I even went on a pastry course to learn how to do puff pastry. I simply buy it now. It was to expensive to keep wasting so many ingredients. I can make cinder toffee treacle toffee and peppermint creams but I can not make caramel. I don't know why it just never happens. I have two huge walnut trees in my gardens. I normally collect them and give then away. Now I want to try this. You're an excellent cook. Calm and I love all your different cookware. Thank you for another brilliant recipe

U just have to keep trying. You need the right butter for a good puff pastry. Use bread flour for strong dough. Let rest over night to develop strong gluten strands. Don't press too hard when rolling dough. Keep dough cold. I'm a self taught baker and I finally mastered puff pastry and even croissants

Also caramel is easy. Pot with heavy bottom. Medium heat. Melt sugar slowly and in increments. Don't stir wet caramel until all sugar is melted. U can stir dry caramel from outward to inward to help even melting. Add hot cream, not cold.
