Boozy iced teas are popping up everywhere so I had to try and make my own. Brewing up a hard tea is about as easy as it gets, and is perfect for a quick, simple fermentation this summer. Refreshing, smooth, and customizable to any flavor combo you want, give boozy tea a try today!

RECIPE for 1 gal (3.78L):

-1 Gal (3.78L) Water
-30g Black Tea
-2 cups [~400g] Total Sugar
______________________
-SafAle US-05 Ale Yeast
______________________
-Brew Tea for 3 minutes, cool to room temp
-Ferment @ 69ºF (20.5ºC) for 1 week
-Add flavoring to keg or to secondary if bottling

Original Gravity: 1.040
Final Gravity: 0.998
ABV: 5.5%

Hell yes! I can't wait to try this! Personally, I don't even like regular seltzer so hard seltzer is a huge no for me (I've had enough of them to know I'm not a fan). This Hard Tea might be a fantastic option for this Texas heat!

I’m mixing fresh frozen raspberries and frozen peaches from the store in my new brew bucket! Think I’ll make it a 3 gallon batch.

I just made this one (but with honey instead of sugar) as my very first ferment, and I'm so glad I did 😋 it is delicious!!! On a hot summers day, this hits just the right spot.👌

Hi BruSho... thanks for some high quality videos that are informative. I brewed this recipe without the peaches and the green tea without the melon to taste the base product; both taste a bit yeasty (Safale 05). What do you think happened? I will continue with the black tea and refine it for my own tastes. Thanks again!

All my primary fermenter are in storage right now. But just scored 3 free 11.4 l (just over 3 gallon) fermenter from the local smoothy shop. Time to try this one

Yeah for sure! Twisted tea is a bit more sweet than what I made but you could easily make it sweet for him

Thanks for suggesting this video. I think I'm gonna try making a hard tea when the weekend rolls around, but I'm gonna use hibiscus tea and add some peaches and tart cherries into secondary. Hibiscus and tart cherry has become my favorite combo, adding some peach might make it even better.

After brewing many ciders, meads hard lemonade etc, I decided a long time ago I would just stick with beer brewing. But this looks pretty delicious and easy, I'm going to have to give this a try. Peach is a great idea for this Brew. Did you get that color solely from the frozen peaches? Almost looks like it's mixed with peach juice

Actually I think most of the color comes from the tea. I am going to be trying with other fruits to see how they impact color. Let me know if you try making it!

Would like to aim for white tea peach for first one. What would you recommend if i wanted % to be ~8.5. Just more sugar?

Yeah more sugar = more alcohol. But too much and it can become very thin and harsh. But 8.5 should be ok

Hi I am a new homebrewer and this is my 2nd ever brew. Issue I am having is my airlock isnt bubbling and I tried to take a specific gravity 3 days in and it us higher then original specific gravity. Another note the liquid I used to check specific gravity was bubbling a little kinda like when u pour beer and let it sit specific theirs no foam just bubbles forming from the bottom. It does taste off or anything. I just opened the lid and it seems to be bubbling a fair amount lots of little bubbles. Is my airlock faulty? Any thoughts as to why all this is happening? Love ur channel btw 😊

Hey! So some thoughts.. the airlock might not be bubbling if it isn’t a full seal, if your fermenting in a bucket there might be a gap In the lid? It’s ok if so just maybe try to fix that for the next time. And for gravity, are you taking a measurement with a refractometer? If so you need to use an online conversion calculator to get an accurate reading once fermentation starts. If you’re noticing some fizz or activity the gravity should be dropping.

@TheBruSho it's meant to be an airtight bucket but yes that may just be it. But I am using a hydrometer and I have heard sometimes the bubbles during fermentation can make the hydrometer float higher so I guess wait for more time till bubbling slows down to get a more accurate measurement?

Great recipe! Do you leave the peaches in the keg after the 7 days, or do you remove the bag?

I just keep them in there the whole time but you could try fishing them out if you want.

Beginner here, If I were to use this recipe and then bottle at the end would I add the peaches before the fermenting process or after?

I would add them during fermentation to make sure all the sugars fully ferment out before bottling

I would do this, instead of using sugar, using a low temp. mash of pilsner malt and flaked rice... that would be awesome

How long does it last after making? Like if I keep the final product in the fridge will it last longer

Yeah definitely. Probably good for a year in the fridge. But I’m guessing the sooner you drink it the better it will taste

Doesn’t need any maturing but if you wanted to bottle condition it that would take 2 weeks to reach full carbonation

Do you have to stabilize it then add fruit or is that only if back sweeten?

You don't have to stabilize, especially if you're kegging, you can just add it in and as long as your kegerator is cold it will keep re-fermentation from happening, or at least really prolong the time it takes to ferment out the sugars.

@@TheBruSho I've not got keg so would be just bucket infusion then bottling. Would still not need to? And just add bit sugar to carbonate? Or should I not stabilise and let the fruit sugars carbonate? Giving this one a go and sake soon, keen to try peach sake but working out atm lol

@@mathewgodfray6547 If you plan to bottle then don't stabilize, I would just do the infusion in your bucket, let the sugars from the peaches ferment out then proceed to bottle like normally.

I just kegged my 5 gallon batch tonight. After thinking about it I wish I would have just added the fruit to the fermenter and not the keg. But oh well, what's done is done.

No not really when kegging since the temps of the kegerator keep things cool enough but if you think it will be an issue you can pasteurize it first
