It selects automatically but you can stop / cancel. Yes you can cook while the lead is open . Yes it comes with a stirring spoon (plastic)

I am always scared to pressure cook with the valve completely sealed for fear of it exploding. please confirm if it is safe to cook with the pressure release valve closed completely.

I close mine completely, after the timer has stopped ,you leave it to cool down it will release the pressure on it's own or you can use a wooden stick to lift the valve to release the pressure before of opening that's when you're in a hurry .It's safe when closed .

Unless the recipe calls for an open valve. Remember it used that pressure to cook.
