This is what happens to the shell in this reaction. "CaCO3 (s) + 2 HC2H3O2 (aq) → Ca(C2H3O2)2 (aq) + H2O (l) + CO2 (g)" Which is Calcium Carbonate 'the shell' + 2 Acetic Acid 'aqueous' yield Calcium Acetate 'aqueous' + water + Carbon Dioxide 'gas' . The Acetic acid reacts in a similar manner as heating the egg if you where making a hard boiled eggs by rearranging the proteins in the egg white and yolk. If you wait long enough about 6-7 days you will have a pickled egg. Yes you can eat them but to make sure they do not have any bacteria it is best to hard boil them first and to use a egg pickling recipe to get the flavor you want. Did I get this right Kate?
