Bousinage: the toasting of the barrels.
An essential step with a significant impact on the infusion. The bousinage transforms the wood macromolecules (lignin, cellulose and hemicellulose) into aromatic molecules which will allow a better impregnation of the character and aromas by the bioethanol used by Amouage.
