We had a neighbor who buried a couple 1/2 barrels in his backyard and cooked up a good old fashioned Michigan BBQ fir the neighbors! Burgers, ribs, and more sweet corn than I've ever seen before. 🎉

Tools I never want to use again: A post-hole bigger, fence pliers, and a come-along. I'll eat those ribs though.

For ground like that. Always carry atleast 5 bricks and heat them thoroughly. If you can. Place them next to the fire. Then add coals and then the bricks(or vice versa) then add alot of coals. That way the left over heat cooks everything

Beef short ribs can taste even better than a steak when cooked low and slow. I used to do them in a crock pot. They also work in a pressure cooker like the Instant Pot. You can even give them a quick sear on the sauté setting.😋

Grilled pork chops are better than steaks! if you use a heavy baking brine soaking over night, then risen them off good > pat dry > melt butter over them> I like to use chicken bouillon on them, then the seasons, let set out for 1 hour soaking up them seasonings , Then there ready to be smoked grill 👀 Oh Lord Yum 👌 they will melt in your mouth. 10 x better than any steak. more tender, juicy, and DELICIOUS than a steak.. You can do steaks the same way > but i prefer the pork chops >THIS IS THE END TO DRY, TOUGH, NON FLAVOR, PORK CHOPS

You made a comment that is gold for crock pot cooking. Pre-heat the pot. When i make a crock pot pot roast, i always put the veggies and seasonings and spices in first, let them start heating up. When i feel the crock is warm enough, i sear the roast and get it in there. Then let it set for hours. This helps avoid the dangerous period of "not hot enough to prevent bacterial growth." If the liquid is already 140 degrees +, you can put the meat in there raw if you wanted, and it'd be safe to eat. But you should sear the outside of your meat, that's just extra flavor.

I cook deer ribs in a Weber with some hard wood, in a foil pan with onions, hot peppers, tomatelloes,salt, pepper and garlic. For 3 1/2 - 4 hrs. I might try the dutch oven when I get a chance. Looks and and sounds good Kent. Great job.

I season meat with equal parts fresh cracked black pepper, onion powder and garlic powder. I braise with Lipton Onion Soup packets, some beer & beef stock (1 to 1 ratio), 2-3 bay leaves and a cinnamon stick. I always add more beer to bring up the level of liquid if needed and I'll enjoy my wine with the meal🍷 You Sir are a living Legend, Blessings to both you and your lovely wife .💞

Man, I love cooking methods like this. Takes me back to my time with the scouts, cooking whole chickens with heated rocks in the cavity, wrapped up and buried in hot coals and clay. Or turning a old metal filing cabinet into a bread oven, good times!

I love the Barbacoa video and I love this one. I never dug a hole but I did put my Dutch oven and a 22-inch cauldron. It had three holes drilled in the bottom for a planner but oh my goodness how good is the smoke flavor when you can get some of that in the Dutch oven. Couple of layers of heavy-duty aluminum foil on the top and 1 lb Rock just to keep the stuff in place if you got wind

Howdy from Texas County Missouri in the heart of the Ozarks. I am proud to say that I'm a Kent Rollins fan. This episode is great because you mentioned Justin Wilson and Julia Childs. Maybe you could do a series on some of your spins on famous chefs recipes. We'd definitely extend "Show Me" hospitality if you came here also. We are going into gigging season on these Ozark riverways . Green suckers are a delicacy in the hillbilly fish world. Youd be right at home with us.

I usually build a fire in the hole & fill it with coals. Take just enough coals out to put the pot in and then cover it with coals & dirt that way the hole is heated up by the fire.

I saw you digging a hole in the ground to cook and I immediately thought of when my family would cook leg of lamb/goat in a pit. That was the most tender meat ever. We never used a dutch oven in the pit, but with your video tutelage, I think even I might be able to make a successful rib meal! Thank you so much!

Mr Collins, Enjoyed this video so much from Cape Cod, learned a lot! In-ground slow cooking was a common way the Wampanoag people taught the English settlers to cook sea food .. A clam bake with lobster and corn is still a very popular summer feast tradition here. Very hot rocks in the hole covered in sea weed, then food then more seaweed. Steamed to perfection.

Learned to cook in a dutch oven in the scouts but we sealed the oven with any kind of dough from scratch made to the biscuit dough in the container you popped.We used to do 2 family camps a year and when new moms saw us put a pot roast into the ground and covered it up with dirt, they were seriously laughing at us. The laughing stopped when the dutch oven was dug up and opened. Made believers out of all of them all of the time.On the bar above the fire i like the fact that you have several different lengths of hangers. Never thought of that but i will add that to my set up.A;so the foil on top of the coals is a very good thought. It will be added also.Toward the end of my camping days we added raw charcoal to the coals below and above the pot.

As an ol'gal, I used to cook short ribs all the time. They were a cheap, family friendly big time feed. Saw them at the store last week...they were more expensive that steak!!! If you can afford them, they are a great feed....especially Kent's way!

I sear ours in bacon grease and crowd them into my Mom's 75 year old Griswold lidded cast iron skillet. They cook on a very low flame for all afternoon. Sometimes, I add vegetables towards the end; they are soo good when steamed in that rich broth.

A friend of the family was a hunting camp cook whose services were highly sought after in Colorado. In the 70's and 80's those Texas oilmen could come out there and pay her in the mid 5 figures for her to cook for 2 weeks at their camp. That was a lot of dang money back then. Oh, boy could she cook up some bbq short ribs! I've been trying to duplicate her recipe for years, but just can't seem to come close to it. She's passed on to that great hunting camp in the sky, so I can't ask her for her recipe.

Talk about tender> Lord they fall apart> Great for breads, snacks, tortillas, tacos, any Mexican foods, Chinese foods even in a bowl of rice ect YUM.. 👉The trick to post pole diggers is? 👉👉 Pour water over and down the hole 👍👍 MAKE IT MUCH MORE EASIER TO DIG OUT> I had some hard clay i was digging out, and i pour water down the hole. Came back 1 hour later it was so easy to dig out. PASSING ON TO OTHERS !! Its like using DRILLING FLUIDS 🤪🤪
