Man, this job was really a HERO for my early to midgame, especially when Ringabel (outfitted to be a Black Mage/Summoner) was falling off. I ended up kitting him out as a Spell Fencer/Summoner, and the combination of high power summon magic, aspir weapon attacks, and the sheer low cost high damage of sword magic is just plain fun.

Since you asked why Spell Fencer have so many defensive options. I think it has to do with Spell Blades/Magic Knights usually being warriors specifically trained to fight and kill mages. A good example are the Death Knights from Warcraft who aside from having the standard magic interruption, have the ability to silence, an Anti-Magic Shell that absorbs most of the incoming magic damage and can create entire Anti-Magic zones that also absorb incoming magic.

I love using a party of Dark Knights with the Drain Sword skill. I tend to use the one attack that constantly hits the enemy until you are low on health, but keeps going for about TEN attacks before stopping. Easily my favorite combo.

My super combo was dark knight with spell fencer sub job. Simply using drain you could heal off of your dark knight abilities giving you a constant attack buff while staying at full health

I find M.Def Specialize to be very useful for the final boss, as it's magical attacks "Armageddon" and "Disaster" are both magical attacks, which are also the most dangerous ones, as they can easily deal 5000 HP in damage, and that's if he's unbuffed. If he's buffed with his Celestial Touch, he can wipe your party unless your HP is above 9999 or you have extremely high MAG Def. This assumes Hard difficulty, just to clarify. Mind you, Absorb Magic from Dark Knight (Default, then next turn use Absorb Magic+ an attack of your preference) also works for that purpose (specially if cheesing it with Hasten World, but I'm excluding that, because I don't like cheesing it), since there's no way to tell when it uses Disaster, M. Def Specialize is more reliable, and the final boss doesn't use physical attacks that often during the final phase (And since it only targets one character, it's a minor annoyance if it happens to K.O someone.)

I've gotta fight you on the fashion tier list. Edea's outfit is by far the best part of the spell fencer job.

I’ve seen someone use a blood axe I think it was to cast spellblade drain and switch their weapons during a brave basically having magic sword amp without the double mp cost, and this would buff their damage as well in any attack

isn't firewall basically the DnD spell hellish rebuke? I wonder if that was an inspiration. heck, the spellblade has horns, and hellish rebuke is a feature of teiflings.
