I made these Sunday and they're fantastic! Husband said they're the best enchiladas we've ever made. Perfect with sliced avocado on top and a sprinkling of black olives.

I made this for supper tonight and it is beyond ridiculously good! Think of it as a Mexican lasagna with the layering. (I have Isa Does It cookbook and have been trying her recipes and every single one of them are great.). Edited to add this tweak: when I make this again, I will forgo the potatoes and add fresh or frozen corn. It needs the balance of sweetness and texture from the corn. Otherwise very good.
