John presents a Mexican Style Vienna-type lager that he brewed using the new hybrid lager strain from LalBrew called NovaLager.
John was practicing and preparing for his next Jar of Destiny beer, German Pils, and wanted to try this new yeast.
The NovaLager strain is noted for being very clean even at higher than traditional lager fermentation temperatures. John kept this ferment just under room temperature in his cool basement without active temperature control.
NovaLager lived up to is description and created a clean, crisp, and clear Vienna/Mexican style lager. This beer was so good I couldn't stop gushing over it in the video. It is super drinkable! This recipe AND the yeast strain really hits it out of the park on this one.
WATER
Spring water with 7 grams of gypsum added to the boil
GRAINS
66% Weyermann Vienna malt
22% Briess Pilsner Malt
11% Flaked Rice
1% Dehusked Weyermann Carafa Special II malt
(These percentages were updated after the fact since I steeped the Carafa Special II malt as the boil got started.)
HOPS
23 g of Perle hops (5.1% AA) added with 60 minutes to go in the boil
12 g of Saaz hops (4.5% AA) added with 20 minutes to go in the boil
28 g of Hallertauer hops (4.0% AA )added with 20 minutes to go in the boil
Whirlpool addition of 28 g of Hallertauer hops (4.0% AA) - I chilled the wort to 185° F (85° C) and let it sit there for 10 minutes before chilling down to fermentation temperatures.
YEAST
1 packet of LalBrew NovaLager yeast
DETAILS
Fermented at 62°F (17°C) for one week
I used of a water bath for temperature control during fermentation
Transferred to the fridge for one week at 33°F (1°C) for yeast settling
When I transferred to the keg, I added gelatin to clarify the beer
Original Gravity: 1.042
Final Gravity: 1.009
ABV: 4.3%

If I had more patience, I would let it sit in my fridge for a few weeks after racking to a secondary. But I don't! - John

That sounds like a great fermentation program. I typically run my pressure fermented beer to a serving keg, so I can reuse the yeast. I am cheap and try to get 6 uses out of it. This one might be nice to keep in the starter flask, and just bump start the starter a day early... FWIW - I am brewing a batch of simple lager with Novalager now. It is slow to start but looks alive...

So I don't have problem with Lutra Kveik in making lagers and I think it does a great job. However it is not cheap, so I was very excited to see Nova lager and got me some. My first brew with it is planned next week so you have been very timely and encouraging having made such a superb beer with it. Cheers Dudes 😊

I use the omega dry and it’s not super expensive. More than most dry yeasts, but not terrible. I want to say it’s like $3.75 a pack at my local HBS. The biggest problem I have with it is when it loses its freaking mind at 12-24 hours. A blow off tube is absolutely necessary.

Nice video as allways Dudes! I´we used the NovaLager yeast in two consecutive brews in the last month, works great in my opinion. Second brew on the slurry from the first. First brew in keg for two weeks by now, very crisp and clean,. According to David Heath, Lallemand suggests it will ferment clean up to 23C/73,4F, I stayed under 18C/64,4F. Skål!

I've just started using NovaLager in my last batch of lager. I really like the fermentation. I was using dry Lutra in my lagers, but find they are missing something. They're good, clean beers, just missing something. I have a Mexican style lager (NovaLager) ready to keg and can't wait to taste the beer. A split batch comparison video between NovaLager, 34/70 and Lutra? Thanks for your efforts.

I used Nova at 15°C in making an Enigma Pale Ale, then followed up with a Biere de Garde wort (OG 1.072) into the FV on top of the yeast lees. That one fermented at 19°C and finished at 1.014. Rather pleased with both beers.

Not long at all. One week conditioning for the primary vessel after fermentation. Racked to keg with gelatin and it was in the fridge for a week. - John

How does this compare to 34/70? I ferment that in the low 60s for lagers as well and get similar results.

Trying to copy this recipe, and I went through the comments and transcript so I wouldn't have to bother you with a stupid question, (and here I am anyway lol) but John didn't mention the size. Since he said it was kegged, I assumed it was 5 gal. Is that correct? Thanks

i did a mexican lager with a twist i used 0.5 oz of amarillo at fwh. then saaz and hallertau with 0.5 oz of tettnang at flameout it came out really different but really nice
