Used all the information I learned from TRoy to do a 7 lb brisket flat today on my 18 1/2 in Webber using the SnS Charcoal basket for my grill. It doesn't have a water pan so I just used a disposable aluminum pan filled with water. Pulled it at 212 degrees after 6 hours at 300-325 degrees. It was awesome. I made this last week! Thanks for the video, you inspired me to make a hot and fast brisket on my weber 22" kettle. It turned out fantastic - especially after letting it rest for 3 hours. Bottom bark was a little tough before it rested because I don't have a slow and sear, but I'll use your brick advice next time. Thank you T-Roy!

Looks mighty good!! May I suggest something that I think is important. Cook by temperature. Perhaps you did and I missed that part. Insert a cooking/meat thermometer in a thick part of your brisket and cook it until the internal temp is 185 to 190 deg. If you can slow down your cooking temp. and add more smoking wood, your smoke ring will be "thicker" too. Been cooking briskets for many years and i have tried all kinds of different ways and have found out that slower is better. As for seasoning?? After many trials and experimenting with all kinds of rubs etc., I now only use the following. A light coat of yellow mustard, kosher salt, black pepper and garlic powder. That's it.

Man, I absolutely love the Royal Oak XL Cut! I've been using it for the last couple of months for smoking and grilling, and it is fantastic. Burns hotter, burns longer than their standard lump, and overall is a really great charcoal.

Just wanted to say a massive thank you. Just cooked my first ever smoked brisket (after watching almost all you’re videos 😂) i have a bbq/grill/smoker I got from a store here in the UK and gave it a go using this same method and it worked a treat. Think I might get a proper smoker next as trying to get it to stay within 225f and 250f was a nightmare! It was only a 3.5lb and toke around 7h but it was beautiful. Thanks again mate now I’m off to look at a new Weber Smokey Mountain 😂

I was so happy to see this video! I bought a huge offset smoker when I first started and it was just too large for the cooks I do. Looked at WSMs and couldn’t make my mind up between the 18 and 22. I smoked my first brisket this weekend on my Weber Kettle. It turned out great, but man I have to look into that slow n sear! I have the baskets but that water pan must be the ticket. I was so happy to see you fit an 11 pounder on there though, because I only bought a 5 pound brisket because I was worried about fit. Looks like I’d be fine with at least a 9-10 pounder. As long as I’m only smoking a couple racks of ribs, two butts or a single brisket, I think I can use this method for just about everything!

I went to American BBQ cooking class last week and this might sound blasphemous to the Americans out there but instead of water, the teacher said to put a knob of butter and half a beer in the crutch. I plan on trying it in a kettle cooker soon. Nice looking Brisket, I learn a lot from your videos! I have been doing mine similar, but I start them at 250 on the KJ and just let the temp rise toward 350 and hold it there until done. I do wrap as well and use beef broth like you showed in a past brisket video! Thanks for the tips!

T-Roy, thanks for sharing. Nice to know that a brisket can be done on the Weber Kettle. Sure, not the cooker of choice for a brisket, but you showed it can be done. I don't recall you tasting a smoke flavor in your taste sample. Would you have added more wood chunks at the beginning to try and get the smoke flavor more pronounced? Hey Anthony, I appreciate you watching! Yeah, I would have added more smoking wood at the beginning of the cook and until I wrapped. I think the Mojobricks burned up quicker than normal because I was cooking at almost 400F. Yep, we gotta support our Vets!!! Cheers to ya brother!
