Probably because we like knowing the things we grew up around can be loved by people who may not have even known about it until just then. Seeing the love and appreciation for something so close to us is a big deal. So again, it’s because our pride on our cooking and recipes can be enjoyed even outside of our own culture and we love seeing that look on their face as they take a big bite. We love making people smile with our mix of cultures over the years. We tend to be people pleasers even if just a bit. So that enjoyment makes us feel good. That and we tend to turn onto these vids to try and get that ‘first bite” feeling back a little by watching their first try. Probably both.

Food tends to unite so many different types of people, and America, due to our history as a melting pot of cultures and people, have many various dishes. Even a few greasy spoons/diners, off the beaten path. People from other countries, visiting the states for some delicious American cuisine, reinforces the nature of the country being made up of different cultures. Anyone can make it here, and anyone with a hankering, can come across the pond for a bite.

It's smoking the meat. The general idea is that the ideal cuts of meat are going to be inherently tough because of collagen. However, the collagen has a lot of taste. To break down the collagen takes a long cooking time, but not necessarily at high heat (unless it's in a pressure cooker which raises the temperature). However, you'll get this really rich taste with otherwise tough cuts such as pork belly, oxtail, brisket, etc. And of course ribeye steaks, although that's typically not cooked low and slow except for prime rib. A lot of those cuts were sold as poverty foods really cheap, but a lot of them have premium prices these days. Just look at how expensive beef tongue is now.

It is absolutely possible to drive through a little town of less than 1000 population, randomly stop at a gas station, and have the best brisket sandwich you've ever tasted. There's a lot of American restaurants specializing in "foreign" cuisines, even if a lot of them are adapted to accommodate American palates. When I see videos of American-style BBQ restaurants in other countries, usually its a poor imitation thats been skewed fo the tastes and flavors of that country. This looks like the real deal. We went to a McDonalds when it first came to the U.K. back in the 1970s. Having been brought up with proper British (European) table manners*, I simply couldn't get my head around a restaurant not having any cutlery. It's a long time ago now, but I'm fairly sure I asked where they kept the knives and forks (I would have been about 12 at the time). * The first time I visited the US, I was similarly fascinated how Americans said grace before a meal (something that had all but died out by that stage in the U.K., and is virtually never heard today). So, in some ways, American table manners are stricter than ours.

I grew up in the Midwest but moved to the UK in 1994. Although good British food is amazing, there is a pride and generosity of hand in American cooking that is too often lacking here. One friend told me she'd lived in the US for a few years and never once had a bad meal because even the lowliest greasy spoon takes pride in what they do (leaving out fast food chains of course) whereas too often places in the UK seem content to serve a mediocre meal and settle for a "That'll do" attitude. American barbecue is making some inroads here but I've never seen it done exactly right in a British establishment.
