It’s fair to say that this chef, restaurateur and author has transformed the way the world prepares and shares food. ‪@Ottolenghi‬ creates a feast for the eyes (that INSTA grid) and a feast for our tables too. His cuisine is a masterclass in colour and combinations and he champions the humble vegetable like no other. Today he is joined by the esteemed recipe creator and head of his Test Kitchen, Noor Murad.
The pair discuss their new book Ottolenghi Test Kitchen: Extra Good Things, which is full of ‘flexible, flavour-packed dishes that all lend a little something 'extra' to your next meal’. They share their memories of food growing up and give British desserts a very interesting review.
Keen to impress her peers, Angela carefully crafted a rocket and cannellini bean bruschetta followed by a creamy pasta with lemon and chard and washed down with a Blueprint white burgundy.

I used to work next door to Ottolenghi's test kitchen under the overground arches in Camden. He's such a nice man. He used to bring us samples of recipes he was working on, catered our Christmas lunch free of charge and gave us a little gift each. Lovely bloke!

there's a lot to tease with British cuisine but i DO think the one thing they truly get is the comfort and _niceness_ of a sweet treat. their desserts, their afternoon tea...all divine.

I wonder if this is a result of climate? Sugar is a natural preservative, honey inhibits the growth of pathogens and bacteria and never spoils, and lots of warm spices like cinnamon and clove have natural antimicrobial properties. In the Middle East the hot climate would make short work of any rich dairy, solidified fats like butter, etc… such desserts like that would need to be eaten the day they were made , if not within hours of preparation in the Middle Ages. Baklava, basbousa and kunafa are relatively stable at warm temperatures without going wonky. You need cold butter to make short crust pastry for pies and shortbreads. In the UK, for much of the year they could easily get away with using dairy, eggs and solid fats without them melting or spoiling, so custard pies, shortbread, and trifles posed little risk of illness if they were left out for a day or two in the chilly English countryside. Also, the average person didn’t have access to “exotic” spices. I’m no historian but my mind wanders when people point out cool differences like this 😅 History, culture and climate are the building blocks of every cuisine which is one thing I really appreciate about humankind and our diversity 😊💚

Exactly! As a Brit expat I go all out searching down ingredients and getting stuff shipped to bring a bit of my childhood home at the holidays. I’m at it now for Easter (no golden syrup here in the U.S)

Thata very good point. British desserts are so much more relaxed and forgiving. Even special ones like Christmas pudding is basically a steamed dump cake; dump everything and steam for hours.

Yumm! Nothing like custard on top of a nice sponge. I like to make a spotted dick or syrup sponge from time to time . Since I’m a Brit expat I have to search out currants, sultanas and golden syrup - plus I have to search for Birds if I don’t want to make my custard from scratch. It’s worth it :))

Yummmm in the trifle. Our family made one for special occasions has grown to the size of a punch bowl with liquor soaked jelly rolls and lady fingers circling the bottom and layer upon layer of jelly, pudding, cake, fruit and whipped cream. It’s a sight to behold.

British desserts aren't pretentious & come in proper portions, not 3 small bites in the middle of a plate that's more about pleasing the eye & palate but not the appetite, where British you get a good old bowl full of satisfying delight, generally made from every day ingredients, with simple methods & not a ingredients list & method that is more like a science experiment.

They do different things. The technique of French desserts are unparalleled. Some Italian desserts have great flavour but in terms of comfort and basic home baking, Britain is often overlooked, but they are brilliant.

@@LooselyGrope I go to the UK at least 3 times a year and have lived in Ireland for most of my life , there are lot of comfort desserts I like in the UK , but to say they are the best ever it’s a real stretch

​@HayleyGardening22 Love a lemon tart. Bakewell tart, yum. Welsh cakes? Shortbread or a posset? The different cakes Brits bake? They are up there but they often get re-spun to make them palatable to differing tastes. I'm not of British origin but British home bakes are elite.
