I would suggest just normal table height with sneeze guards around the edge. This is what our group uses, you just have to watch the young kids that they do not try and touch. This is what the group I am part of does.

You seem to be answering your own question. Table top height is about 30” / 750mm. The lower you go the more protection you need.
