I am bi-BBQ. I can swing both ways. I really do appreciate the excellent meat, but I love a good sauce too. I don't drown it or cover it up though.

I mean.... lbr tho... it ain’t like they’ve got much over there with that much flavor lol they literally SAID they don’t season their batter on their fish in their “fish & chips” dish with a straight face in one video where they were eating fried fish in Louisiana & comparing it to the fried fish in the UK. 😅 anyone who eats anything battered & fried & DOESNT SEASON THE BATTER ain’t used to eating foods with flavor at all! 😂 As someone from South Georgia whos been eating soul food their whole life, I was SHOCKED when they said that in that video! I'm a southern woman, and it makes me so happy to see people not only enjoying our food but our culture as well. Worldwide, there is the stigma about Americans and how we're uncultured, and seeing these two men experience our culture regionally and Countrywide makes my heart swell

I didn’t really understand the craftsmanship and dedication that actually goes into a great brisket until recently. But when done right it is a transformation equivalent to a caterpillar becoming a beautiful butterfly.

I happened to be in Dallas and decided to go here based solely on this video!!! It was freaking AMAZING! I got the pork ribs, brisket, jalapeño sausage, green beans and coleslaw (trying to keep Keto). My friend ponied up with the beef rib. I had some of the beef rib and you gentlemen are 💯% correct! That is the best meat I have EVER had! Thank you so much for this video!!!

Josh and Ollie’s shock about how the best meal is just found on the side of the Highway, unassuming restaurant is just a perfect description of southern food. The best foods down here aren’t in chains or Michelin star restaurants, though they do deserve stars; they’re in the random, hole in the wall, mom and pop restaurants. So glad the south is receiving more love and recognition for its amazing food!

As a European by birth who moved to Texas almost a decade ago I can confirm. Texas BBQ is absolutely phenomenal and it blows away every BBQ imitation I had back home in Europe. Like it's not even close, it's like an adult man beating up a toddler, that's how big the difference is. And the crazy thing is that there are another 3 or 4 American styles of BBQ that are just as good as Texan BBQ. And then there's South American BBQ, such as Brazilian BBQ. Europe is so far behind in the BBQ game it's not even funny.

As someone who's lived in Texas for 15 years and married a Texan, I'm of course partial to our BBQ. However, I wouldn't turn down anything from St. Louis, Kansas City, Memphis, or the Carolinas either. And the folks in South America all have their own unique style with wild flavor too. Completely agree with you observations.

I live in Alabama and finding brisket is almost impossible. have had some out of state but no local places carry it. I used to have a buddy fed ex me brisket on dry ice form out of state but he moved and no longer has access.

I just arrived in Texas after a long stint in NYC. I'd have brisket on occasion there. It was usually easy to get there but ran from $20 - $30 per pound.

I've lived my entire 33 years in Texas and smoking BBQ runs in my family, seeing this reaction from people trying real Texas BBQ for the first time makes me incredibly happy. I'm 45 miles away from Terry Black's and there aren't many places i would say could have been better. Great choice. Great representation of our State's best food

I've eaten Louisiana bbq from my paternal grandmother, Alabama bbq from my fraternal grandmother, a mixture of the two from my father and mother. I've had bbq from North Carolina, Florida, and several other locations north and south. I have NEVER had better bbq than I've experienced at Terry Black's. Hands down!

oh i always tell other europeans with anti-american sentiments here in Germany when it comes to American food and say stuff like "yeah its all fast food in America" with a reply like "Did you ever head to try a Jambalaya ? ...NO then STFU" -my personal dream remains to one time fly to new orleans in the craw fish season and eat my self full with it.... my 3 personal dreams about the united states 1. fly to new orleans for cajun food 2. go to a texas chilli cook off. and also have a bbq while in texas. 3. as a wrestling fan see on time a wrestlemania live. I think I could die happy after archived this goals.

@bomberdomme7308 boils aren't so common in New Orleans, you'll want to go towards the bayous, like Houma. My ex is from there and God damn the crawfish boils we had!!! There's places that you can grab a personal sized for yourself. I'd definitely get a rental car if you're going to new Orleans, the French quarter gets old fast as it's a tourist trap

Very true, a friend if mine from Chicago visited me one summer. I smoked a brisket and some chicken, along with some polish sausages. After some hours, he told me I had forgotten to buy bbq sauce. I told him I happened to have a bottle of kraft bbq sauce that was about 2 years old, collecting dust. He couldn't get over the idea that we don't consider sauce a part of the bbq process, or, at least I don't. I asked him if he grilled his hot dogs already smothered in musterd? No. Ok do you grill your hamburger patties slathered in mayo? No, of course not. Why not? Because its gross, those are condiments. I said, Exactly. That's why Texas bbq is cooked by smoking, and served with sauce, on the side. Its a condiment. Folks that slather bbq sauce on the meat while it cooks are trying to hide a nasty flavor in the meat. In Texas, we want you to taste the flavor and juicyness of the meat, then if you want, dip it in sauce. You'll also be asked to sit at the kids table.

Brisket has a very interesting story. Brisket comes from the lower chest of the cattle and as such is a very dense and hard muscle and was considered a 'throw away' cut because no one could cook it. Well the ranch-hands/cowboys that tended the herds asked the owners if they could have it and they discovered that if you cooked it at a very low heat (ie smoke cooking) over a long period of time the fat would render and soften the meat.

The one in New Braunfels is good too. I haven't eaten at the one in Austin, but I have been to NB and Lockhart. The two times I've been to Lockhart the brisket was dried out, I was sad because we've never had a bad experience in NB.

Texan here, y'all hit on one of my favorite things about Texas bbq that I hadn't even thought of: how humble it is. You see a line of people who have been standing there for 4 hours before opening waiting to get in and get the best food you've ever eaten in your life served to you on paper plates and styrofoam cups on the side of the highway, and not a single complaint can be heard about any of it. There's no atmosphere you feel like you have to live up to, it's just good food and good times

they did it just right too. Barbecue in America is food that's supposed to take an entire afternoon to eat, it's as much an excuse to hang out with your friends as it is to eat a meal. It probably looks weird to a lot of europeans, to just get a huge platter of food and then just go at it with your hands... but yeah, that's kind of the point. There's no ceremony, there's no etiquette, it's just you, the food and the company for a couple hours

Yeah, Georgia ain't much different, though we tend to favor soul food more than BBQ. You ever come to GA, check out Pralines (Kinda like pecan cookies), Divinity (A pecan meringue dessert), and some soul food, especially nice greens that have been slow cooked in leftover meats, typically a bit of pork fat, my favorite are the mustard greens, though they smell awful, their taste is what matters really.

If you go to Austin, you could spend a full day just eating BBQ, they have some top Notch places there, Franklin's BBQ, LaBBQ just to name a few. Austin is a food mecca for everything. Black's is pretty good as well, though Franklin's is often regarded as the Best BBQ in the US, but they have a 4 to 5 hour wait to eat there. So Terry Black's is a close second.

Austin is a unique place, lots to see there, very diverse with food and culture as well. They have a great Food Truck section with several food trucks parked in one place. If you want some more fantastic BBQ, you can drive couple hours from Austin to a town called Lockhart, Tx, they are also very well known for BBQ, worth the extra trip, Imo. I would avoid going to 6th St, if that is on your itinerary, it is mainly for the younger college age kids, and has kind of gone downhill with crime. It is mainly bars, but Austin has a thriving nightlife, so no shortage there if that is your kind of thing, there are plenty of places for entertainment. Lastly, welcome to Texas, I hope you enjoy your stay here🙂

Most people want the "experience", so the waiting is part of that for them, but If I had to wait 5 hours to eat somewhere, I would convince myself pretty quickly it was the best I ever had also. The locals, don't really eat there. And also avoid "Dickeys" brand BBQ, that is more of a fast food equivalent BBQ in Texas, and is not indicative of True Texas BBQ.

As someone who has lived in TX all his life, I am so happy to see y'all visit our neck of the woods. TX BBQ is IMO one of the few cuisines that America can legitimately call its own. TX pitmasters are truly the master chefs of slow cooking. As for turkey, a properly cooked turkey is almost addicting to eat. It was one of the candidates for our national bird for a reason!

Of all the Jolly vids, this is the one I watch the most, and the one I introduce your vids to others with. I think it's the magic of when you bite into the Dino rib with its flavours seeping into your body and the subtle bluegrass music in the background like America is seeping into your soul. @@joshjones718 i think that's really a gross underestimation of how hard it is to cook proper Que, there is an art form to proper Que and you talk like it's so easy that you could do it. i mean sure if you to try you'd probably make some decent Que, but it's likely gonna be tough and/or dry, because you dont know what you're doing.

@@fishguy911 I was somewhat a tourist, I’m from San Antonio lol. Thanks for the answer, I was super curious. I saw the salt lick on food network and wanted to go so I went lol. It was the best barbecue I’ve ever had and I always buy the Spicy Barbecue sauce from HEB now lol Glad to know there’s even better barbecue just down the highway.

I’m a Texan currently in the middle of a month in the UK. Their idea of BBQ is what we know of as grilling and every piece of meat is well done. A good BBQ or Tex-Mex restaurant would make a killing here, provided you could get Health and Safety to approve your cooking methods. Lol

Yeah, it's kinda weird having a BBQ in your back yard in the UK... We're the only ones in our neighbourhood doing it. And I won't cut corners. I am not doing gas. that's not a BBQ. Charcoal or gtfo. Trouble is the smoke. And they have laws in the UK against smoke. So it's out of the question to smoke a brisket for 12 hours, Texas style. It's such a shame... British people would be a heck of a lot more fun if the government would stop making their lives difficult with nonsense rules and laws.

@@CtrlAltRetreat I think you're supposed to compost. Not sure, I'd love to have an undergrowth to have that problem. The law applies everywhere. The difference is that in the country side people won't be as bothered by your smoke so they won't report you. And they might even agree with you.

As a resident of Austin, I love Terry Blacks BBQ and I swing both ways in regards to sauce or no sauce on bbq. Texas bbq is pure culinary art at its finest and simplest.
