Eggs in Baked Potato
Ingredients
• 2 russet potatoes (about 1 pound)
• 3 tablespoons unsalted butter
• 1/2 cup half-and-half
• 1/2 cup shredded white cheddar, plus 2 tablespoon for topping
• 1/2 packet hot sauce
• 4 egg yolks
• 1 teaspoon kosher salt
• 1/2 teaspoon ground pepper
• 2 tablespoons chopped chives
Steps
1. Preheat oven to 425 degrees. Place the potatoes on a sheet tray and cook for 60 to 70 minutes, until the skins are crisp and a knife easily pierces the potatoes. Remove from oven and let cool slightly. When cool enough to handle, slice potato in half lengthwise. Using a spoon, scoop out inside of potatoes, leaving about 1/4 of flesh. Mash potato insides until smooth.
2. In a small saucepan, melt butter with half-and-half. Add to a large bowl along with mashed potatoes and mix until incorporated. Add cheese, salt and pepper. Spoon back into potato skins. With the back of the spoon, make an indentation and add egg yolks. Place potato skins on a cast-iron pan, and bake for 4 to 6 minutes, until yolk has set but is still runny. Remove from oven and top with chives and more cheese.
Orange Cranberry Scones
Ingredients
• 3 cups all-purpose flour
• 1/2 cup granulated sugar
• 1 teaspoon ground ginger
• 3 teaspoons baking powder
• 1 teaspoon kosher salt
• 6 tablespoons cold butter, cut into cubes
• 3/4 cup whole milk, reserve 2 tablespoons for brushing
• 1 large egg
• Juice and zest of 1 orange
• 1 cup dried cranberries
• 2 packets (2 tablespoons) Sugar In The Raw
Steps
1. Preheat oven 425 degrees. Prepare a sheet tray with parchment paper.
2. In a large bowl, add flour, sugar, ginger, baking powder, salt and butter. With 2 butter knifes, cut in butter until mixture is crumbly.
3. In a bowl, whisk together egg, milk, orange juice and zest. Add to flour mixture, add cranberries and mix just until combined. Dump onto a lightly floured surface, knead gently for a few minutes (just until flour is incorporated) and shape into a disc, about 9 inches round and 1 1/2 inches thick. Cut into 8 wedges, but do not separate. Brush with milk and sprinkle with sugar. Bake for 15 to 18 minutes, until golden brown. Remove from oven and let sit for 10 minutes.
Sausage Sweet Potato Hash
Ingredients
2 tablespoons vegetable oil
1 red onion, small diced
1 (8-ounce) medium sweet potato, peeled and cut into 1/2-inch cubes
3 sprigs thyme
1 green bell pepper, small diced
1/2 pound chorizo
2 cloves garlic
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 teaspoon cumin
1/4 cup chopped cilantro
1 packet hot sauce
Crema:
1 avocado
Zest and juice of 1 lime
2 packets mayonnaise
1/4 teaspoon kosher salt
2 tablespoons water
Steps
1. In a cast-iron skillet on medium-high heat, add oil and saute onion, sweet potatoes and thyme until tender, about 5 to 6 minutes. Add bell pepper, chorizo, garlic, salt, pepper and cumin. Cook until chorizo is browned. Add hot sauce and cilantro.
2. In a small bowl, add avocado and mash with a fork. Add mayonnaise, lime
zest, lime juice, salt and water. Blend until smooth. Plate hash and drizzle with crema.

I'm so happy I found a food channel doing budget versions of tasty adult food instead of only offering budget toddler food- like yes of course I love 3 cents per serving chicken nuggets, but sometimes I need food that tastes more interesting.

I seen a trick where you freeze the butter your putting in your scone and use the grater to get little small pieces of butter to make it flaky.

I love KZfaq cooking shows and there is nobody even remotely like this guy. He is so original, and the premise of the show is done very well. Thanks Frankie, you are very entertaining. I’m sure it is difficult when so many are making food videos, but you are really unique. Great job, man. Can’t wait for more from you

When you buy the chorizo... GET IT IN SAUSAGE FORM!! Yes it does cost a little bit extra and you do have to de-case it however it is such a superior product. It’s not super dry (like most of the “Mexican Style” chorizo that you see more in America) and it is 10 times more fresh. There is nothing wrong with “Mexican Chorizo” or getting cheaper chorizo because sausage is sausage in the end. Also here’s a tip: Don’t buy it from Whole Foods! It’s super expensive there and you’d be surprised how cheap so many people sell it for.

For quick perfectly baked potatoes, you can put them in the microwave on high for about 8 to 10 minutes. It results in a nice fork tender potato.

Frankie, I finally figured out who it is you remind me of...Graham Kerr, aka, "The Galloping Gourmet." Graham's energy was boundless (might still be, though he's now 84 years old), and his continual humorous patter was delightful. My parents and I would watch his show with great delight, and even today, even after he changed from cooking very rich and decadent foods (his now deceased wife, Treena, had a massive heart attack during one show's filming, and it changed his outlook forever on the kind of food we should eat), I get a kick out of the reruns available online. Your energy and cooking advice is pretty much "up there" with Mr. Kerr's, and that is a very high compliment.

I make a slit around 3 sides of the potato before baking. Helps create a harder (baked) wall for holding n easier scooping of the flesh.

I'm new to your channel and am so very happy I found you. I would like some information on how you organize your packet drawer. I'm actually afraid to open mine as it is true mess. Thanks in advance!

I'm not Frankie, but his drawer looks like it has compartments that are usually used to keep cutlery organized. That keeps the packets from moving around and getting mixed every time the drawer is opened or shut. If your packet drawer doesn't have those, place some empty boxes or glasses in there instead. To keep it as cheap as possible, repurpose packaging you bought other stuff in. Anything with an open top and flat enough to fit into the drawer will work. Getting the stuff you already have sorted could be a bit tedious, but afterwards it's just a matter of putting mayo-packets into the mayo-carton, ketchup-packets into the ketchup-jar and so on.

Dollar Tree has lots of small drawer organizer type items that are leaps and bounds cheaper than at other stores. I have bought tons of items there for which I organize my kitchen cabinets and drawers!

do you live near a Target with a fresh grocery section? i think avocados are often about $1.25 there out of season. check aldi, too. or just wait till summer and buy them that cheap (or cheaper!) most places.
