Baby Buddy is turning one! Kimi Werner starts the morning gathering ti leaves to make a very special lei. She then tries a healthier take on a “smash cake” by making a chocolate haupia pie with avocado frosting! They have a family beach day with surfing, music and a few of Buddy’s best friends. Lots of love and favorite memories are shared in this episode!
Recipe for pie:
Graham cracker crust:
2 cups graham cracker crumbs
1/4 cup sugar
1 stick melted butter
3 tablespoons coconut oil
Haupia filling:
3 cans coconut milk (I added one off camera)
1/3 cup sugar
1/2 cup corn start mixed into 1 cup liquid (I used macadamia nut milk)
Couple handfuls dark chocolate added to half haupia mixture
*this recipe is modified as my haupia git thicker than necessary so this should be more pourable.
Frosting:
3/4 large avocados
1/2 cup cacao powder
1/2 cup maple syrup
Liquid if needed to blend (I used macadamia nut milk)
