Today I am sharing with you Bulk cooking Indian Meals for freezer video. This is my first ever massive Indian meal prep video
There are 10 different dishes, each with minimum of 8+ servings plus multiple servings of Paneer Makhani and pav bhaji Bhaji
All of these are freezer friendly and in my absence, my family simply needs to thaw out one daal and subzi for 6-8 hours prior to their meal time, heat on stove and serve along with warmed up store brought rotis.
Per my estimate, there are
Moong Usal
four -2 cups TakeAlong containers
Matki usal
four of these 18-ounce containers
Paneer Makhani in
three 28-ounce take out containers,
Cauliflower bhaji in
four 2-cups take along containers.
Dudhi Bhaji in
three 18 ounce take along containers
Tondli Bhaji in
three 2-cups take along containers
Gavar bhaji in
three 24-ounce take out containers.
Green beans besan bhaji
two 12-ounce containers
Between a combination of bhaji/usal/daal & chapatis (there are at least 15 combinations!), take out from local places and meals sent in by friends, there will be more than enough food for my family. In fact, I just made servings worth an extra container of each so that when I come home, I don’t have to start cooking. I can reheat these and save the day or two or even a week!

I am inspired by your video. Me and my husband prefer to eat at home and often get too exhausted cooking every single day. Work, kid, homework, outside activities take up so much time. Wow ! Great meal prep , I was searching for Indian freezer meals and watched your video . Since I'll be going to India for 2 months I want to freeze meals for my husband who will be back early and will have to stay without us for a month and your tips have given me the confidence to go ahead!! I also started doing bulk prep (not in such large quantity though, mostly prepssure cooking daal, beans, and chapati dough) when I was doing my PhD.. experiments, samples at weird hours of the day, would make it almost impossible to cook everyday! plus living in US where no help other than hubby, made me choose to go this way...

Hi Rashmee.. Everytime you feel like you've scaled the mountain, there is another load waiting 😩 75-80% of the time, I follow this schedule - -Tuesdays (boys clothes) and Wednesdays (mine-hubbys, towels) Boys take care of their own laundry (washing/drying) and I take care of folding all our clothes and towels and Boys put away their clothes and I put away mine-hubby's bedsheets (once every 2 weeks), bathroom mats (once a month, first get them risned in the bathroom with washing soda and then they go in our washer/dryer) hubby takes care of dry cleaning (since COVID not as much, but recently it has started picking up) HTH😊

Dipti, that was a lot of work!!! Thanks for sharing!! Also, I have never cooked beans before so I didn’t know it doesn’t have the string , lol!! May be I will try using it into my meals next time! Of course you had to meal prep and freeze these meals for your family, so using frozen veg was not possible , but just recommending frozen guvar (deeps premium) if you wanna try .

Thanks Suki❣️I have used Deep's frozen gavar previously, and bhaji has come out pretty good. And i do have it is as a backup in my freezer anytime I don't have fresh gavar on hand... we love gavar a lot❣️

Yes you should... just a recommendation, when you buy, see if you can get one which has a protective rubber on the bottom so as to not scratch the bottom of your pans/pots. Mine doesn't have and I wish I had researched it more before buying mine.

That was a huge undertaking. As someone who meal preps frequently, a suggestion is to not make complicated stuff that takes a lot of prep like beans. I also fry the onions to golden with the garlic ginger and tomato before pressure cooking. I freeze it in muffin tins. Then it basically blends itself when you heat it.

Thanks for that suggestion. As mentioned in the video, I made these meals for my family in my absence, where they had to simply heat the veg or daal or curry.. easier for them. Most of the times I prep just the masala and freeze it in freezer safe molds and use them as needed.

Thank you❣Assuming you are preparing subzis from fresh veggies (not frozen veggies), then the prepared subzi needs to cooled completely and frozen ASAP.. when stored this way, most of the subzis have been good for 6-7 weeks.. they may last longer, but I don't know for sure, because I haven't test beyond this time frame.. With that said, I wouldn't recommend storing besan based subzis in the freezer... also check the comments section, where i have responded to some more querries...HTH

I just came across your video! This was Herculean effort on your part, I’d have quit half way through, your perseverance is commendable. I’m not going on vacation, but looking for meal prep ideas for a regular work week. Your narration and tidiness in the kitchen was impressive. The only thing I felt I’d have done differently was use instant pots to cook all those bhajis like pav bhaji, gavar, cauliflower etc.’

Thank you very much❣️Many people have said the same to me and suggested use of instant pot. At that time, I dind't have instapot, so used what I had on hand.. but now that I have one, I am not so keen on using it.. I hoping that one day i will take it out of the box and use it.

Hi lovely and intelligently made videos . Just found and subscribed . Can you please respond to my query. When you say make half baken chapatis or paranthis and stack them on plastic sheets to freeze are you referring to CLING WRAP ? Also when you say parchment paper do you mean baking sheet paper ? Why not use baking paper? Thank you for sharing your knowledge.?

Hi Vineeta, thank you for subscribing. When I say plastic sheet, it’s cereal bag plastic or zip top bag plastic sheet and not cling wrap. Cling wrap is too thin to be used. Plus they are too clingy to even be cut into circle or square.. I save used up zip top bags or empty cereal bags and trim the edges and depending on my mood either make large enough squares or rounds.. parchment paper is the same as baking paper (can withstand high baking temperatures) so either can be used. I think in US it’s called parchment and other place baking paper. HTH

That’s such an awesome effort! I was curious- did your family use all the meals ? Did they find any difference in taste and and texture between these and freshly prepared?

Hi Mansi👋 according to them, and me as well (since I am now eating them), rajma/moong usal and matki didn’t show any chnge in their texture. Of all the bhajis, cauliflower bhaji was little bit on the mushy side after thawing and microwave heating (they did transfer from plastic to glass container 😅).. when I reheated it on stove, it was still in mushy side, but according to them, stove was better than microwave.. dudhi, gavar when heated on stove were pretty decent in their textures.. green beans w/besan bhaji (stove top heating) was good where beans were concerned, but besan did form small lumps that didn’t have the same texture as you would have in fresh bhaji.. pav bhaji was best only when it was reheated on stove (they didn’t like microwave heated version at all).. paneer was good either way

@@mansipandit233 I would recommend that if tou are looking to freeze, then flash freeze veggies instead of cooked subji or prepared bhaji. Subjis prepared from frozen veggies come out as good as ones from fresh veggies… prep your veggies, lay them in a single on a small baking tray or plate and freeze them for 30-45 minutes. Then remove them from tray and place in freezer safe bag/container and freeze. These should last for up to 3 months. Remove frozen veggie only 10-15 minutes before you are ready to prepare bhaji and prepare it the same way you prepare fresh bhaji.

Hello.. thank you 🙏🏼 this meal prep for 3 people for about 5 weeks, mostly weekday dinners (5 days x 3 people), weekend lunches (2 days x 3 people) for weekday lunches, my kids would make PB sandwiches or heat up frozen parathas or and eat pizza at school and my husband would heat up parathas or make something quick at home for himself. Weekend dinner they would have take outs or my friends would send something for them.. though when I returned small portion of few items were left because they were tired of eating the same & I can very well understand 😊

Loved the idea. 2 queries. Can they be kept in fridge instead of freezer in steel or glass containers? Can the onion tomato gravy be kept outside after its throughly fried in oil ?

Hi Vidya.. thank you. Subzis/daals can be stored in fridge for 4-5 days, but for longer they need to be freezed (frozen). You can store in glass or stainless steel containers (my favorite is glass containers - easy for thawing and reheating in microwave, for steel container, you will have to tranfer food to glass containers if you plan to reheat in microwave).. But here i choose freezer safe plastic containers, because I was making quite a lot of food and feared that too many glass containers would prove heavy for my freezer shelves. And though stainless is light, in my absence, my family would have to go through an extra step of transfering food in to a separate container to reheat. I wanted to make it easy for them, hence I choose microwave safe plastic containers. Even though onion and tomatoes are thoroughly cooked/fried in oil, it wouldn't be safe to store them on counter (higher chance of food spoilage). I would recommend you store them in fridge (4-5 days max or freeze them for 6-8 weeks) HTH

And for that huge quantity I don't think glass or steel can be used. I asked reg keeping the gravy outside bec I was watching few videoes on canning. Like we keep pickles or chutney which we keep for month... or canned foods. But still not clear about it for Indian food. Do make video if you get data, will be helpful for everyone.

I stored them in the freezer for about 5 or 6 weeks.. the night before my family would take out a subzi/curry from freezer and defrost in the refrigerator and next day they would warm it up on stove (transfer from plastic container to pot).. HTH

This reminded me of us children sitting on my grandmother's porch, stringing beans as my mother and grandmother brought in the harvest from the garden. They brought the beans in paper grocery sacks, and we each had to work through one or two paper sacks per stringing session, before we were allowed to go play. Good memories!

Hi ma'am, I am a student and I have recently felt the need to do meal preperations. I have never before felt the need to eat frozen food, however, it is now necessary for me to do it. Since, I am very new, I have few questions for you, 1) I see that you fully cook the "sbji's" as we normally do, and deep freeze them. How long they remain eatable? I have only done it for tadka (masala? i.e. fried onions, tomotoes puree which is a gravy base) and I see it remains useable for 15-20 days easily. But I have never done for things like cooked rajmas, daals etc, so my question basically is, are other vegetables also going to stay fresh? Should I worry for health etc? 2) For thawing, what I do is, I just transfer the containers from freezer to normal section when i leave for my job, when i come back, its usually not so cold, and i defrost for 5 minutes in microwave, and then heat it in glass container. Is it the right way? 3) Lastly, what are the best vegetables that you would recommend me to cook and in what order, so that if I want to plan my cookings for 3-4 weeks, i am able to eat the one's that stay the freshest in the end. for e.g. start with aloo gobhi, finish wtih rajma etc? Hoping for an answer from you :D

Any freshly prepared meal, if stored properly (once completely cooled and then kept in fridge immediately) will last for 4-5 days (make Sure you keep these in drawer section of fridge or at the back end, so that opening & closing of fridge will affect its temp. However once such refrigerated food is heated, it should be finished off within the same day and not re-refrigerated. HTH

Hi Ashima.. it took me about 35-36 hours spread between 3 days, from driving to do groceries, prepping and cooking, cooling and packing and cleaning and of course taking breaks and recording the whole process.. As long as you let the food cool to room temperature and pack it in air tight container and freeze it, it should last for good 4-6 weeks. Hope this helps. Hello.. I am glad you like my approach of cooking. - If you store chopped vegtables (unwashed) in paper towel lined airtight containers (be it glass or BPA free plastic) they will last any where between 4-7 days in refrigertor (4-5 degC) depending on the vegetable itself (more water content in vegetable, shorter will be its storage) - if you store the same vegetables in vacuum sealed bags or containers, then chopped vegetables will store well in refrigerator for anywhere between 10-15 days (but I mean truly vacuum sealed using a machine and using good quality sealing bags or containers, not the typical ziplock/ziptop bags) - I would not store cooked curries in the refrigerator for more than 2-3 days, and no more than 4 days, regardless of its stored in BPA free plastic airtight or glass containers. I would not store cooked curry in fridge (regardless of whether vacuum sealed or not) beyond 4 days - I always store cooked curries in freezer, either in BPA free plastic (freezer safe) airtight or glass containers for anywhere between 6-8 weeks, assuming the cooked curry is thoroughy cooled to room temperature. What if gavar strings are not removed? I just wanted to know because I never remove it I just start chopping 😂 is it bad for health ? Millennial Indian here so I would like to know thanks

Hello.. the reason I remove strings for gavar or green beans or val papdi or toovar, is because the strings are pure fiber and do not breakdown during cooking. So when you take bite with chapati/roti, it leaves/May leave those fiber pieces in your teeth. Plus removing them opens up their side areas, enabling quick cooking without making them soggy/limp. if gavar is really soft then removing the strings may not to be that critical. And if you don’t care for the strings coming in your mouth/teeth, you can skip removing the strings 😊 and just go for picking them. I find picking beans like gavar, val papdi/toovar gives a good texture to the cooked bhaji than chopping/cutting, but that is my preference. Chopping green beans is better than picking (IMHO 😂) You can cut rather than pick, if that’s what you prefer. Do what is easier for you 😊HTH♥️

No I don't do tiffin service... This massive meal prep was for family to have in my absence.. I was going to visit my parents in India for a month and made it for them, that way they had homemade food for them and not rely completely on resturants

Lemon juice (acid) helps remove superficial/surface impurities or any surface treatment that the vegetable may (or may not) have been received.. I also find that washing cilantro in lemon bath makes it taste less soapy (not sure if anyone experiences soapy texture to begin with 😊)

If stored in the freezer, it will not. However, once a meal is taken out of the freezer and heated, then any leftover from that meal will lose its taste in 1-2 days. HTH

Highly colored veggies/fruits (red, yellow or orange peppers, not green peppers) , tomatoes, carrots, beet roots, yams (ones that are orange from inside, not white) will loose some of thier nutrients as these have anti-oxidants called carotenoids.. so these should be washed before cutting and storing and ideally should be eaten raw as cooking them causes significant loss of nutrients. Only tomato when cooked becomes more nutritous than its raw form. other than that.. i would always take some loss of nutrition over my family eating outside everyday in my absence😊

I guess washing before processing is good, the nutrient values have started to decline in fruits and vegetables and washing after cutting/peeling makes them even less dense in nutrients.

I was going to India for a month and had decided to make enough for them so they don’t have to eat out everyday.. usually i don’t prepare these many meals… however, I will 2x or 3x certain meals like lentils, bean stews, paneer curries as they store well in the freezer… I hope you have a good time with your friends 😊

Nobody really asked me for it, but I feel it was my duty to learn to do household chores so that my mum, sister or wife can always be at ease and be less anxious about the things will be managed in their absence. In this video I saw how tired and sleep deprived you were because you wanted the best for your boys. And standing for such long duration is a recipe for health issues. Generally in india all double earners do all cooking and chopping only in the morning of that particular day with little work at the night.since you live in usa you may be believing that and you are doing for quiet long.but in india no.because frozen food and after heating may be good for westerners.also science may sound good .fresh is fresh.since you put so much effort to freeze.why donot you get up earlier to do the cooking.do you believe in freezing,thawing and microwave for heating .because we are told all vegetables should be chopped and cooked freshly.

First of all, kudos you and your better half (I am assuming there is a better half😊) for working together as a team both in and out of home. It's a lot of hard work to not only prepare everything from scratch, but also to do it on a consistent basis, especially if there is no house help available for other household chores. However, I can't do that, so I do what I can do and supplement myself and my family with multivitamins and minerals 😊

We have been told so many things in India and so many misconceptions are yet to change! I belong to a hardcore Gujarati family and even I found this difficult too. But this is the best way to be more productive every day. In fact, my food is more nutritious than I used to have! The word 'Westerner' is not the correct term, the word is 'developed'. FYI, multivitamins is a 'western' concept. and P.s. Multivitamins are not a substitute for food. Moreover, in #India, we have a conception of eating fresh veggies, but we do not know how those veggies were grown and what chemicals were used! But want fresh! Developed countries do not have to worry about the quality of their produce. Here no one colours Tinda or injects bottle gourd. Food remains fresh as always when frozen. कहने के लिए खेती प्रधान देश होने के बावजूद भी, भारत मे अभी भी फूड प्रेज़र्वैशन टेक्निक का अभाव है। ज्यादातर फल और सब्जी फेकने पड़ते है, क्यों की वो व्यक्त पर मार्केट नहीं पहोच पाते।
