Just a bit on the outside so the outside is crispy and the inside is fluffy! Humans have evolved to like that combination of textures!

They didn't cook them long enough. If you look at the color difference, the unsoaked fries are darker. The soaked ones just need a little more time to make them crispy. (Neither fries seemed crispy enough).

The reason you want to soak the potatoes is to prevent them from oxidizing. If you’re only cutting up one potato, like yall did, oxidation isn’t a problem; if you’re doing multiple like everyone else does, then the first few potatoes will oxidize in the open air.

@@Subsistence69 yeah, the best method would be to try every possible combination of the selected variables at the very least. like, who knows, maybe the reds are the best but only if you double fry them and soak them first.

Y'all missed the frozen vs. room-temp fries! Supposedly, freezing your fries before frying makes the potato turn some of its starch into sugar, which makes for a crispier, more brown fry.

The "eyes" or sprouts on a potato only really matter if the potato is very green or wrinkled and shrunken. The sprouts contain glycoalkaloids that can start to turn the potato toxic. Just remember, potatoes are a part of the Nightshade family. Yes. That Nightshade family. Like Belladonna. Also I will always do skin on as the skin has the most nutrients for a potato. Magnesium, B9, etc.

Seeing as crinkle fries have more surface area I would think that they should have more crisp, but I've never tested this.

Normally I'm a big fan of this series, but I feel like for French fries, since every type of potato had a distinctly different mouth effect, it would've been better to try each individual method on each potato. I feel like a double fry would be better on a Yukon Gold, for example. That being said this was made for entertainment and I was entertained, so I can't complain.

This exactly. I actually make my fries with Yukon Golds because they are the most delicious by a mile, IF you cook them right. You need to do a lower temp blanche first, then let them cool completely and firm up a bit, they will fall apart if you handle them too much at this stage, then once they are cooled and firmer, do a high temp fry.... they are incredible. Perfect combo of smooth fluffy interior and crunchy delicious exterior. I got this above method from Matty Matheson, in case anyone was curious.

As a Belgian, I fully endorse (and predicted) this 'french' fry outcome. As a Flemish person, I must say that we're really not "just France": 60% of us have Flemish (variant of Dutch) and not French as a first language! If anything, we're like half France, half the Netherlands, a pinch of Germany and a whole lotta compromise 😂

Here's an idea: the baked potato. Do you really need to poke holes in it to prevent the steam from building up causing it to explode? I call BS on that, but do the poked holes result in a better product? I need the crew's scientific analysis on this one.

Used to work in a restaurant and cooked buckets and buckets of breakfast potatoes daily. We'd soak our cut potatoes in big buckets for at least a whole day, 48 hours was best Whenever something went wrong and we needed to chop them up and cook them immediately, we could see a massive difference in how fast the fresh cut would brown vs. the soaked. I think the "cold oil" method helped to even out the browning because at 375°F oil, the difference was literally night and day between soaked and unsoaked

A French chef, I think Robuchon, came up with it a decade ago. It's been covered by food magazines (it goes back to when print was a thing) and food blogs. It works if done right, supposedly.

You’ve got to soak them in salt water. The salt seasons and pulls water out of the fry to help with crispiness.

What about the fish and chips approach you did a while back? Blanch (par-boil?) the fries in water as salty as the ocean then put them in the freezer until they are almost frozen then from there shock them in some pre-heated oil until they looked tanned and delicious. This became my go to fry (chip) ever since I saw that

O this was Trevor at his best, he almost looks different than the start of the show, obviously it's been over a year, but still today he finally looks like a well sauced guy in comparison to being partially sauced. 👍

I'm not sure, heading into this, whether or not yukon gold will make a suitable frying potato, but they are definitely one of my favorites for mashing duty. They have a natural buttery flavor and a smooth creamy texture. I suspect this won't be particularly beneficial when it comes to frying, but if they do survive the fry basket, I suspect they'll have a lovely flavor. Edit for more info: if you want to be especially lazy, most frozen fries have already been blanched in oil before freezing, so you can totally just let them come back to room temp and chuck them in a fryer for the crisp. In a restaurant setting, washing off the starch on the outside of the potatoes keeps them from sticking together and helps the oil last longer. Doesn't really apply to home cooking though.

That is a great result for russet potatoes. Unfortunately they did not do the other potatoes justice since with the varying starch and moisture content of each breed, they all benefit from a different approach to preparation and frying. You can make great fries with any type of potato as long as you treat it right, the Yukon gold probably would be great with the blanch in water and then double fry technique that I use with my local potatoes.

One small science-y issue with this. You are using similarly sized pans, but not the same size burner. The larger burner, the more surface space it uses to heat your oil. So the one on the larger burner is going to heat faster. Thus, the oil in the other pan is not going to get to the same temperature and unable to cook the fries the same or get them as crispy. You would have needed to be watching and regulating the temperatures to really get honest results. But - I do love you guys and everything you do.
