BUTTER CHICKEN
Preparation time: 10 minutes
Cooking time: 30 minutes
Serves: 2
Ingredients
For the Gravy
4 large Tomatoes, cut into half
2-3 large Onions, sliced
3-4 Garlic pods
1 inch-Ginger, sliced
1 tbsp Degi Mirch
5-6 Cloves
1 inch-Cinnamon Stick
3 Bay Leaves
5-6 Black Peppercorns
2 Green Cardamoms
2 tbsp Butter
Salt to taste
For Butter Chicken
2 tbsp Butter
1 tbsp Red Chilli powder
1 tsp Coriander powder
Prepared Gravy
3 tbsp Fresh Cream
1 tsp Honey
Cooked Tandoori Chicken, shredded
1-2 drops Kewra Water
1 tbsp Dried Fenugreek Leaves, toasted & crushed
Burnt Charcoal
1 tsp Ghee
Fresh Cream
Coriander Sprig
Process
For the Base Gravy
• In a heavy bottom pan, add ½ cup water.
• Add tomatoes, onions, garlic, ginger, degi mirch and all the whole spices. Mix well.
• Add 1½ tsp butter, salt and mix well. Cover the cook for 15 minutes.
• Once the tomatoes are soft, with a hand blender, blend the gravy till smooth.
• Strain the gravy through a strainer.
For Butter Chicken
• In a pan, add butter and allow it to melt. Add red chilli powder and coriander powder, cook for a minute.
• Pour prepared gravy, mix well and cook for 2-3 minutes.
• Add fresh cream, honey, shredded tandoori chicken, mix well and cook for another 3-4 minutes.
• Add kewra water, dried fenugreek leaves and cook for 2 minutes.
• In a small metal bowl, add burnt charcoal and place it in the middle of the gravy.
• Pour ghee over charcoal and immediately cover with a lid, keep it 2-3 minutes for the smoky flavour. Once done, remove the charcoal bowl.
• Transfer the butter chicken in a serving bowl. Garnish with fresh cream and coriander sprig. Serve hot with roti or rice.

I am a chef myself, and I must say, nowadays, Chefs are frustrated, arrogant and hyper.. Chef Brar is one of the calmest chefs I've ever met. His and Chef Kunal's recipes are the best and easily explained ones and I wish to meet him once in my life

We went and found his Tandoori Chicken recipe, made it. Then used the leftovers for this recipe. UNBELIEVABLY good!!! We added a touch more honey and butter because our tomatoes were a bit more acidic than I cared for, but this recipe was SO easy to follow and adjust for flavor. This was RESTAURANT quality food! Thank you chef!

I have been cooking butter chicken for 20 years….and never marinated the chicken twice….per your recipe…followed your instructions and the results are spectacular. Not only is it the best butter chicken I have ever cooked but arguably the best butter chicken I have ever tasted….thank you for having this KZfaq channel. I have become a HUGE fan! When you grow up in India and then leave India for the US at the age of 23 and spend 30+ years in the US you realize the incredible richness and diversity of flavors in Indian cooking….and thanks to Ranveer Brar I feel like a kid in my retirement years cooking Indian food…..I hope someday I have the opportunity to meet and thank you in person….your recipes make life so much more wonderful!

Like your methods. I am a home cook and like to try different recipes. Mechanical engineer by profession. Now retired. Here have a question. Why put butter in the sauce when cooking? Lot of it will get lost in the sieve leftovers which we throw out. Can we just keep the butter for next process while the gravy is cooked? I use Tandoori chicken from Air Fryer.

I’ll say I’ve watched over 10 videos on how to make butter chicken over the past month and this one has been the best one I looked for considering how you use actual tomatoes instead of of sauce and still getting the ‘orange’ color.

So I was once told by a punjabi chef that the makhni is murg makhni was not because of the butter, it was actually because the gravy is smooth as makhan. Traditionally, it gets its flavour from cashew paste, kasoori methi and mustard oil. But again, this must be one of the many theories as well.

Hi Sir, First of all I wish to tell you that this is the best butter chicken recipe on KZfaq. Secondly, I tried making it. Now turning out good is one thing. But, you know the recipe is on whole other level when you can make your parents proud. My father is hard to please when it comes to food but it is also one of the things we bond over really well. Thanks Chef Ranveer for this simple but elegant recipe. I followed this recipe but incorporated bell pepper, chopped celery, chopped carrots and chicken stock for the base gravy. Used a bit of white alfredo sauce to make the gravy bit richer and less tangy (due to all those tomatoes). End result turned out to be perfect. Thank you, Chef, for encouraging creativity.

Firstly this recipe is amazing !!!! Genuinely stunning !!! Its not to hot, not to sweet, not to heavy 🤗 I personally added an extra 2 drops of Kerwa water and toasted methi and added 1 chopped grean chilli and pinch of black pepper right at the end for my taste. The coal and ghee is not a step to skip it totally transforms the curry. First bite took me back 16 years to a road side tandoori restaurant in Delhi India where I first tried Butter chicken with my cousin whilst on holiday. Ranveer Paji .... Tusi Great Ho 🙏

I usually make a creamier gravy using tomato puree, which is easy to prepare. And it tastes amazing. I would give this one a try too 👌

I just made this, god almighty it’s so so good! I was dubious at first because of the technique being employed, especially the bit about not browning the onions… but I followed the recipe to a T, and it came out amazing!! Thank you!

We were earlier making butter chicken using Varun Inamdar's recipe on Get Curried, which was good, and then I tried this one, and it's even better. I did add a few things though. One star anise along with the other garam masalas, and I gave them 20-30s seconds in the oil before adding ginger and garlic, quick toss and then onion and tomatoes. I also added 8-10 cashews, because why not? Rest I followed as Ranveer ne bataya. Turned out really well.

About 35 years ago, my brother came to visit me from Delhi and taught me what was, to me, a mystery 'orange chicken'. The gravy was almost entirely tomatoes with, may be just a negligible amount of onions. The richness from this gravy came once cream and butter were added which also created this very nice flavour that could even make our neighbours hungry. With just basic spices, it will eventually form its character when you added BBQed chicken pieces. Kasoori Methi came next. Tho I see that you have roasted it. Today, however, I see several variations and methods applied to cook this dish like I see you adding a decent amount of onions. In the west, this dish has attained high proportions of fame and today they even sell pizzas with a butter chicken topping. You can find it as a frozen food entree in the mainstream whites-only grocery stores. My family has grown into loving it over the years from 'What the hell is this orange chicken' to something they can devour every other day ! What I also noticed that you didn't have as much a passion cooking it. After all this is something that came from nowhere and upset the scales of centuries old traditions, and with no cooking sense needed ! I see people using the heavy 35% version of cream that turns the gravy into a rock, and add even more butter to soften it, as opposed to the 18% cream that I use and find appropriate. More than chicken biryani, I personally felt that making butter chicken is more tedious process cuz you have to put all of that in a blender and filter out the seeds and stuff, Grill the chicken separately and add them altogether.
