Butter Chicken with Garlic Naan and Cucumber Raita
Step 1: Prepare the Chicken Marinade
In a large bowl, combine the yogurt, 2 cloves of minced garlic, 1 teaspoon of garam masala, 1/2 teaspoon of paprika, 1/2 teaspoon of ground cumin, and 1/4 teaspoon of cayenne pepper. Add the chicken pieces and toss to coat. Cover and refrigerate for at least 30 minutes.
1 cup plain yogurt
2 cloves garlic (minced)
1 teaspoon garam masala
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
2 pounds boneless, skinless chicken thighs (cut into 1-inch pieces)
Step 2: Make the Butter Chicken Sauce
In a large skillet, melt the butter over medium heat. Add the diced onion and remaining 2 cloves of minced garlic. Cook for 3-5 minutes until the onion is translucent. Stir in the remaining 1 teaspoon of garam masala, 1/2 teaspoon of ground coriander, and 1/4 teaspoon of salt. Then add the diced tomato and cook for 2-3 minutes.

Step 3: Cook the Chicken
Add the marinated chicken and its marinade to the skillet with the sauce. Bring to a simmer and cook for 15-20 minutes, until the chicken is cooked through.

Step 4: Make the Garlic Naan
In a large bowl, combine the flour, 1/2 teaspoon of salt, and 1/4 cup of water. Knead into a smooth dough. Divide the dough into 8 equal pieces and roll each into a thin round naan. Melt the remaining 2 tablespoons of butter in a skillet over medium heat. Cook the naan in batches for 2-3 minutes per side, until lightly browned. Brush the naan with the remaining melted butter and sprinkle with the minced garlic.

Step 5: Make the Cucumber Raita
In a small bowl, combine the diced cucumber, 1/4 cup of plain yogurt, 1 tablespoon of lemon juice, and 1/4 cup of chopped cilantro. Stir to combine.
